does anyone know what can be substituted for aji limon chile? I am trying to make peruvian ceviche and cannot find aji chile, not even at a latin store. will green chilies work?

In Chile AJI is chile but for your sub I would go with an Ancho/ Pablano, it has that same fruity flavor and a safe capsaicin rating.

These peppers have a distinctive, fruity flavor, and are commonly ground into colorful powders for use in cooking, each identified by its color. In Chile, the word ají refers to any chile or chile sauce.

You can substitute aji panca for poblano or other mild but flavorful chile pepper while aji Caballero can substitute for jalapeno.
