Grilled Garlic-Lemon Chicken:
2¼ hours 2 hours prep
4 servings
4 boneless skinless chicken breast halves
2 cloves garlic, pressed
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1. Place Chicken breasts in a medium, non reactive bowl.
2. Add garlic, salt, pepper, lemon juice and olive oil.
3. Turn chicken several times to coat with marinade.
4. Cover and marinate 1-2 hours in the refrigerator.
5. Prepare a hot fire in a barbecue grill.
6. Oil the grill.
7. Remove breasts from the marinade, shaking off excess and place on hot grill.
8. Cook until lightly browned, about 6 minutes.
9. Turn and brush with marinade.
10. Grill second side 4-6 minutes or until white throughout but still juicy.

For our pork chops we use:
Unseasoned meat tenderizer(the kind with the red lid LOL) probably the whole bottle for a family sized pkg of chops
Spinkle LIGHTLY on each side with:
Garlic salt
Cajun
Onion salt
put these in the fridge overnight throw on a hot grill the next day cook until there is NO PINK. Enjoy

i love to marinate steak tri-tip and teriaki sauce for about 24hrs and then grill and put on a salador just eat with plain. also it you like asparagus this recipe is really good take your asparagus and put it in a large shallow bowl, drizzle olive oil on top and lemon pepper and then grill it. it's the perfect vegtable to go with any summer dinner.

Grilled Mushroom Packets
Ingredients
1 pound [about 5 cups] fresh white mushrooms, sliced
2 [about 3-1/2 cups] medium zucchini, sliced
1 [about 1/2 cup] medium onion, thinly sliced
1 [about 1 cup] red bell pepper, diced
1/2 cup couscous [uncooked]
1/2 cup homemade or bottled barbecue sauce
1/2 teaspoon salt, optional
Method
Preheat outdoor grill or oven to 425 degrees. Place mushrooms in a medium bowl. Add zucchini, onion, red pepper, couscous and barbecue sauce; toss until well coated; set aside. On a work surface place 4 sheets [each about 20 inches long] of heavy duty or doubled aluminum foil. In the center of each pieces place mushroom mixture, dividing evenly. Bring long sides of oil together over mixture, allowing space for heat circulation and expansion; fold to seal. Fold up short ends; crimp to seal. Place on prepared outdoor grill, about 5 inches from heat source or in oven. Cook until vegetables are tender and couscous is cooked [on grill for about 15 minutes, turning once, or in the oven for about 20 minutes]. Remove; let stand for 5 minutes. Carefully unfold foil and serve.

My only grilling secret is this...well it really isn't a secret.
For chicken and pork before you marinate soak in a brine solution of water and salt for a couple hours....I have never had dried out chix or pork.

when i marinate my chicken i use wine (white wine)...or 1 can of beer
then i get course pepper and a tad of salt and garlic powder
a lil olive oil...lemon zest and marinate for 45 min to 1 hour for best flavor oh Lord it is so damn good u will luv it!!!
for beef of course i use very lil salt so it does not dry out ur meat but u can use pepper ...garlic (a lil not too much) and worstershire sauce...the key to a good steak is very lil salt and very lil overpowering seasonings u know what i suggest....go to the store and buy hickory or mesquite wood chips and u soak em for 30 min then drain and then add them w/ur charcoal and light up the gril...that will make a tasty steak !!

Get a big piece of tin foil. Cut up a bunch of different kinds of veggies and wrap them up in the foil (add butter if you want) cook on low. When the veggies are almost tender, cook a steak and eat!
