I dont want to spend a lot of money on making a salad, I just want it to be simple, cheap and different. Something that I will look foward to eating rather than a big nice slice of pizza or a big juicy steak, ya know what i mean?? THANKS every1

We eat this salad every night and it's very cheap:
1 cup of cherry tomatoes, halved
1/2 romaine lettuce head (buy it whole and wash it, it's so much cheaper than the bagged crap)
1/2-1 cucumber
juice of half a lemon
salt and pepper
It's simple and SO good!

I make a pasta salad that is really good.

8oz. pasta, more if making a big salad- any kind of pasta. I like using either rigatoni, rotini, triple italiano, or shells.
veggies- tomatoes, cucumber, olives, broccoli, carrots (shredded) and mushrooms work the best, but red or green peppers is a good flavor addition.
about a half bottle of fat free italian dressing. I like wishbone because I think it has the best flavor.
Paramasean cheese- to taste.

Add pasta to boiling water and cook until tender all the way through. Drain and rinse in cold water. Put in large bowl.

Cut veggies and mix with pasta. Add dressing and cheese. Mix. Put in fridge until cold.


I also do an imitation crab salad that is really good. Do the same with pasta as you did with the above recipe, as far as cooking it and rinsing it. Then add a big serving spoon sized amount of mayo or miracle whip, ranch dressing to taste, dill weed to taste, salt and pepper to taste.

Cut crab into small, bite sized pieces and set aside.
Take any veggies you like. I use pineapple, olives, shredded carrots, celery, cucumber and onion and chop them up. Add to pasta and dressing mix. Mix until veggies are well coated. Add crab and mix until the crab is through the whole salad. On top, I put either some dill weed or paprika. You can also add some mustard to the sauce if you want. This also works for shrimp. You can use fat free or low fat dressings in this and it works the same. You can also use some of the juice from the pinapple in the sauce. It really adds flavor!!!

Salad as opposed to pizza??? Good luck! :) Anyway, here goes:

Chef Salad with Ranch Dressing

2 cups torn Romaine lettuce
1 tomatoe cut into quarters
1 hard boiled egg, cut in half
2 T sliced olives
1/2 cup shredded carrots
1/2 cup diced celery
2 oz sliced turkey, cut into bite sized pieces
2 oz sliced ham, cut into bite sized pieces
2 oz sliced american cheese, cut into strips
4 Cheese Ranch Dressing (or your favorite)

Put ingrediants in bowl and toss with dressing. Add croutons if you want. Enjoy!

My man likes the pasta salads from Kraft and they come in a variety of flavors. Then I made him one myself one day and saved a few bucks I used rotini and bought some caesar italian dressing and cooked the pasta and then rinsed it in cold water set it in the fridge for a bit and then added the dressing to my liking and I bought some bacon bits and there was something in the dressing isle that had a bunch of dried herbs and stuff, I bought that and through it on top with some croutons. He loved it.

Just get some lettuce, cucumber, carrots, tomatoes, mushrooms and toss it into a bowl with your salad dressing. You can just make your own salad dressing with just lemon juice and olive oil. Very inexpensive. I have this almost everyday for lunch at work.

You can take grilled/boiled/seared chicken breast and cut it up into bite size pieces. Then add some toasted pecans or walnuts, strawberries/blueberries/basically any fruit on sale, and some balsamic vinaigrette with some little toast brushed with olive oil on the side.

I make this occasionaly - It isnt ultra-cheap, but its not too expensive to be worth it:

THAI CHICKEN FETTUCCINE SALAD

3 boneless skinless chicken breasts (about 1 pound)
6 ounces uncooked fettuccine
1 cup salsa
1/4 cup chunky peanut butter
2 tablespoons honey
2 tablespoons orange juice
1 teaspoon soy sauce
1/2 teaspoon ground ginger
2 tablespoons vegetable oil
lettuce or savoy cabbage leaves (optional)
1/4 cup coarsely chopped fresh cilantro
1/4 cup peanut halves
1/4 cup thin red pepper strips, cut into halves
additional salsa (optional)

1. Cut chicken into 1-inch pieces; set aside.

2. Cook pasta according to package directions; drain.

3. While pasta is cooking, combine 1 cup salsa, peanut butter, honey, orange juice, soy sauce and ginger in small saucepan. Cook and stir over low heat until blended and smooth. Reserve 1/4 cup salsa mixture.

4. Place pasta in large bowl. Pour remaining salsa mixture over pasta; toss gently to coat.

5. Heat oil in large skillet over medium-high heat until hot. Cook and stir chicken in hot oil about 5 minutes until chicken is browned on the outside and no longer pink in center.

6. Add reserved salsa mixture; mix well.

7. Arrange pasta on lettuce-lined platter, if desired. Place chicken mixture on pasta. Top with cilantro, peanut halves and pepper strips.

8. Refrigerate until mixture is cooled to room temperature. Serve with additional salsa. Garnish, if desired.

My favorite is lemon pepper chicken breast and what ever kind lettuce you want topped with some raspberry vinnegrette. Add whatever else like tomatoes or carrots you want to.

Chicken BLT SALAD
4 small boneless skinless chicken breast halves (1 lb.)
1 pouch SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
6 cups torn mixed red and green leaf lettuce
1 cup tomato wedges (about 1 medium)
4 slices OSCAR MAYER Bacon, cooked, crumbled
1/4 cup KRAFT Ranch Dressing
1/2 cup KRAFT Natural Three Cheese Crumbles



PREHEAT oven to 400ºF. Coat chicken with coating mix as directed on package; place in shallow baking pan.
BAKE 20 min. or until cooked through (170ºF). Let stand 5 min.; cut into slices.
TOSS lettuce with tomatoes, bacon and dressing. Spoon evenly onto four plates; sprinkle with cheese. Top with chicken.

GRILLED CHICKEN SALAD
1 bag (10 oz.) salad greens
1 pkg. (9 oz.) OSCAR MAYER Grilled Chicken Breast Strips
2 medium tomatoes, coarsely chopped
1 medium carrot, sliced
1/2 cup KRAFT Italian Dressing



TOSS greens with chicken breast strips, tomatoes and carrot in large salad bowl.

GRILLED CHCIKEN SALAD ON CRISPY TORTILLAS
4 flour tortillas (10 inch)
1/2 cup KRAFT Italian Dressing, divided
1 medium red pepper, cut into thin strips
2 medium tomatoes, chopped
1 cup chopped fresh pineapple
1 pkg. (6 oz.) OSCAR MAYER Grilled Chicken Breast Strips
1 bag (10 oz.) mixed salad greens



PREHEAT oven to 375°F. Place tortillas in single layer on baking sheets; brush evenly with 1 Tbsp. of the dressing. Bake 6 to 8 min. or until tortillas are crisp and lightly browned.
HEAT 3 Tbsp. of the remaining dressing in large skillet on medium-high heat. Add peppers; cook and stir 3 min. or until crisp-tender. Add tomatoes, pineapple and chicken; cook and stir 3 min. or until heated through.
TOSS greens with remaining 1/4 cup dressing in large bowl. Place tortillas on salad plates. Spoon greens mixture evenly onto tortillas; top with the chicken mixture.
