I am a super laid back person who doesn't really get stressed out. I do really well dealing with things. Would I get any benefit from Yoga and meditation classes?

dealing with stress is only the beginning of yoga and meditation. I would say they are mostly about increasing the amount of love in our life. But meditation can take you to many different places depending on what kind of person you are.

I would say yoga is worth a try, but meditation is good for anyone (each in their own way)

Dedicated yogis spend years following strict disciplines and a life of purity to awaken the inner power which lies dormant in most people. The purpose is to attain complete self mastery, which awakens limitless power and brings indescribable constant joy and many profound experiences. Even those who apply a fairly concentrated effort to yoga and meditation practices , particularly if they and seek out a good teacher can also have these experiences. I recommend reading the many books of Swami Muktananda a remarkable, highly respected, omniscient yoga master. Do a web search to find.

Super laid back doesn't come close to it!
