you should use malt vinegar as a condiment at the table to put on fried fish but never in the recipe itself

put some malt vinegar on the fish and frys thats how I like it

Malt Vinegar gives a nice zing to the fish without detracting from the flavour of the fish, if not used excessively.
They go together like ;-

Fish n Chips
Bacon and Eggs
Salt and Pepper
Cheese and Onion
Lettuce and Vegemite
etc
