Sounds like a lot of food, doesn't it? But, I usually lay out a buffet and try to have something that everyone will enjoy. This year I have 2 vegetarians coming, so the extra side dishes are welcomed. Good luck on your first Easter Dinner!!!!

Broccoli Casserole
2 (10-ounce) packages frozen chopped broccoli, cooked and drained
1 cup mayonnaise
1 cup grated sharp cheddar
1 (10 3/4-ounce) can condensed cream of mushroom soup
2 eggs, lightly beaten
2 cups crushed crackers
2 tablespoons butter, melted
Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
In a large mixing bowl, combine broccoli, mayonnaise, cheese, soup and eggs. Mix well with a metal spoon. Place the mixture in the prepared baking dish. Top with the crushed crackers and pour the melted butter evenly over the crackers. Bake for 35 minutes or until set and browned.
Potatoes Au Gratin
3 tablespoons butter
2 tablespoons flour
2 cups whole milk
Salt and white pepper
1 1/2 pounds new red potatoes, cooked and sliced 1/2-inch thick
3 ounces grated Cheddar cheese
3 ounces grated Monterey cheese
Preheat the oven to 400 degrees F. Grease an 8 cup rectangular baking dish with 1 tablespoon butter. In a nonreactive saucepan, over medium heat, melt the remaining butter. Stir in the flour and cook for 2 minutes. Whisk in the milk and cook until the liquid is slightly thick and coats the back of a spoon, about 4 to 6 minutes. Season with salt and pepper. Remove from the heat. In a mixing bowl, toss the sliced new potatoes with salt and pepper. Fold in the cream sauce and pour into the prepared pan. Sprinkle the top of the potatoes with the grated cheese. Place the pan in the oven and bake until golden brown and bubbly, about 8 to 10 minutes. Remove from the oven and cool for a couple of minutes before serving.
And the dessert depends. Usually grandmama makes an Orange Cake which is really good, and very simple.
ORANGE CAKE
1 box yellow cake mix
1 box orange Jello
2/3 c. water
4 eggs
2/3 c. Crisco oil
Mix Jello and water, add to cake mix. Add eggs; mix well. Add oil and mix. Pour in flat pan, 11"x13". Bake at 350 degrees for 30 minutes.
ICING: 1/2 box sugar and juice of 1 orange. Mix well, pour over cake while hot.

I'll give you a recipe for the traditional greek Easter soup, called Mageiritsa. It is usually made with lamb liver, but you can do it with mushrooms instead.:
1. Cut about a kilo of lettuce and half a kilo of spring onions into fine pieces.
2. Also cut a kilo of mushrooms into small pieces.
3. Put everything in a pot with a little warm olive oil, and after turning them around for a couple of minutes, add water. Bring it to the boil and add some risotto rice, half a glass or so. Let the soup boil and make sure it has soup consistency, not too watery and not too thick.
4. When everything has boiled (app. 30 mins), you take an egg white and hit it well with a wire, until it turns into a foamy substance (hit it for about 2 mins). Add to the egg white a cup of the soup, which is still warm, but off the fire. Also add the juice of a lemon. Then, pour the egg-lemon sauce into the large pot with the rest of the soup, and put it back on the fire, until you bring it to the boil. Let it boil for a minute and then it's ready!
(It is a good idea to try the recipe once before you serve it).
Also, add salt, pepper and lemon according to your taste.

argula, walnuts & blue cheese salad
cauliflower gratin
paska
kielbasa & homemade horseradish
as side dishes.

my family always dyes easter eggs and makes deviled eggs out of them for one of our side dishes, also green beans , mashed potatos, and rolls! good luck on your first easter dinner! god bless!
