Does anyone know any websites I can get Recipies for making a curry just like you buy from the local curry house (I like Hot curries like madrass with extra garlic).
Also any good, reliable sites i can buy the spices and herbs online.

If you go onto Ebay in the UK and search on "Chicken Ringstinger" (bear with me) it will take you to a spice supply company called Paradise Tandoori, who sell spice kits to make curries like they do in their restaurants. Each kit also comes with recipes.

If you click on "see seller's other items" you will see all the kits they have available (you aren't obliged to have the Ringstinger, it' just that it's memorable so I always search on that initially!).

They do over 20 different mixes, and all you do is pay £7.99 and then tell them which 3 mixes you want when you pay. They do all the standard curries: tandoori, madras, balti, phall etc. I've had several from them, and they are very nice and quick to arrive too.

hi, i like a hot and sour curry, my recipe is:
grind up mustard, fenegreek, cumin, corriander seeds, peppercorns, and fry a bit, not burn, add chopped onion, chillis to taste, garlic, asfoetida, tumeric, a cardomom (black ones are best) add chicken or meat, maybe a chopped pepper, spoon of pataks balti paste or similar, maybe cooked red lentils, half a lemons juice, can of tomatos, and cook up. add a bit of mango chutney for sweet n sour. get some pillau rice cooked, serve up. i find you gotta experiment a bit, but it comes out pretty much like a shop curry, get the spices from an oriental store, they last for ages and it works out loads cheaper!

Most curries from Indian restaurants are adapted for the Western taste and bear no relevance to proper Indian cuisine.

Spices, herbs and recipes - all excellent, from NATCO.
