Easy Coconut Kisses candy
2 cups grated coconut (bagged will do)
1½ cups brown sugar
1 cup water
Combine the coconut and water in a medium caldero. Bring to a boil. Add the brown sugar and stir. Cook on low heat until the sugar melts and the texture is thick and very sticky. Drop by tablespoons on a greased cookie sheet or on cookie sheet covered with waxed paper. Now let the cookies cool down.
This makes about 20 cookies.
This is a Puerto Rican recipe and a great candy that people made in their homes for the holidays.

Tembleque (kinda like a coconut custard but better )
Cool and delicious
4 cups coconut milk
½ cup of cornstarch
2/3 cup of sugar
½ tsp. salt
1 tblsp. orange blossom water (optional)
ground cinnamon
In a saucepan dissolve cornstarch in 1/4 cup coconut milk. Once dissolved add the rest of the coconut milk, sugar, and salt. Cook at medium-high heat stirring constantly! As it thickens, lower heat until it boils thick. Pour right away into wet molds, pans or cups. Cool and then cover and refrigerate for at least 2 hours. Carefully separate the tembleque from the mold using a knife. Turn it over unto a dish. Sprinkle with cinnamon.
Makes about 12 servings.
Dulce de Coco
Easy *
4 cups dulce de coco en almibar *
2 tbsp. melted butter
2 egg yolks
½ cup diced almonds
1/8 tsp. salt
* Prepare 'dulce de coco en almibar' recipe and let it cool.
Heat oven to 350 degrees. Grease an 8 x 8 x 2 mold.
Mix all ingredients together and pour in mold. Bake for 25 minutes. Cool and cut into squares.
Recipe for Coco en Almibar
3 cups shredded coconut
3 cups sugar
3 cups water
1 tsp. ground ginger
¼ tsp. salt
Run the shredded coconut (store bought is ok) in the food processor to grate. In a medium caldero cook all the ingredients together over medium heat for one hour or until the candy reaches 222 degrees. Let it cool and pour into a glass mold. Refrigerate until needed.

Coconut Cake
INGREDIENTS
1 (18.25 ounce) package yellow cake mix
1 (3.5 ounce) package instant vanilla pudding mix
1 1/3 cups water
4 eggs
1/4 cup vegetable oil
2 cups flaked coconut
1 cup chopped walnuts
4 tablespoons butter
2 cups flaked coconut
2 teaspoons milk
3 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1 (8 ounce) package cream cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8 or 9 inch round cake pans.
Blend the cake mix, pudding mix, water, eggs and oil in a large mixing bowl. Beat at medium speed for 4 minutes. Stir in 2 cups of the coconut and the chopped walnuts. Pour the batter into the prepared pans.
Bake at 350 degrees F (175 degrees C) for 35 minutes. Let cakes cool in pans for 15 minutes then remove and finish cooling on rack.
To Make Frosting: Melt the butter or margarine in a skillet. Add the 2 cups flaked coconut and stir constantly over low heat until golden brown. Spread coconut on absorbent paper to cool.
Cream the remaining 2 tablespoons butter or margarine with the cream cheese. Add the milk and confectioners' sugar alternately, beating well. Add the vanilla and stir in 1 3/4 cups of the toasted coconut.
To Assemble Cake: Spread tops of cooled cake layers with some of the frosting. Stack them and then frost the sides of the cake. Sprinkle Cake with the remaining toasted coconut.

I do coconut an chicken soup you put two sliced uncooked chicken breasts in a pan of water add two chicken stock cubes wait till chicken is fully cooked an put fresh coconut in sliced fine then add a few slices of ginger put a couple of pinches of sugar in an salt an it done, i eat this when i have not been well it simple , or you could do a coconut curry .

Coconut Macadamia Shortbread
Ingredients
1/2 cup salted macadamia nuts
2 tablespoons granulated sugar
3/4 stick (6 tablespoons) unsalted butter, softened
1/4 cup confectioners' sugar
1 cup cake flour (not self-rising)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup plus 1 tablespoon sweetened shredded coconut
Instructions
Preheat oven to 325 degrees F. and generously butter a 9-inch round cake pan.
In a food processor, pulse nuts and granulated sugar just until ground fine (do not grind to a paste).
In a bowl with an electric mixer, beat butter with confectioners' sugar until light and fluffy. In another bowl, whisk together flour, baking powder, salt, nut mixture and 1/4 cup coconut. Beat flour mixture into butter mixture until just combined.
On a lightly floured surface, knead dough 5 to 8 times, or until it just comes together. With floured hands (dough will be sticky) press dough evenly into prepared baking pan and sprinkle with remaining 5 tablespoons coconut,pressing lightly to make it adhere. Bake shortbread in middle of oven 30 minutes, or until pale golden.
While shortbread is still warm, loosen edges from pan with a small knife and cut into 8 wedges. Let shortbread cool in pan. Carefully transfer shortbread to a platter.
Yield: 8 cookies
