If the meat is ground fresh, under very sanitary conditions, then I'll go as 'low' as a medium or medium-well.
If I don't know the conditions under which the meat was ground: well done -- just barely well done.

All meats (burgers, chicken, pork, bacon, roast, etc.) have to be cooked well done. The only thing that doesn't is steak. I want it to be brown on the outside and a cool red on the inside. :D

well done, hard. crispy edges. a little burned taste to it.
My husband is a chef and he won't allow ground burgers to be cooked less than medium well-well done. Customer's at his restaurant complain. He always tells the manager, better to have an upset customer because it's "too well done" than one who is upset because he is sick.
