Right, "cooking" sherry and "cooking" wine have added salt in them, so they are practically worthless

I use Sheffields Creme Sherry. I keep a 1.5 liter bottle in the cupboard next to the stove. Most any 'cheap' sherry will work -- I've tried many brands.

Please don't ever buy cooking sherry (or any other cooking wines, for that matter). They're loaded with salt, which ruins the flavor. Manufacturers did this because you don't have to be 18 to buy cooking sherry, and kids were going in and buying it off the shelves and drinking it, so the manufacturers decided to add salt.

As for cooking with wine or sherry--I usually buy the cheapest I can (I don't mean Boone's Farm, but something that's about $7.00 per bottle) and it always tastes fine.

You've learned a valuable lesson. If you wouldn't drink it, don't cook with it. Either get someone to by you real sherry (a dry Fino) or do without. The people who produce cooking sherry should be shot. Never use it! P.S. There are three reasons to use either water, stock or wine. 1) To add liquid (tap water will do) 2) To add liquid and flavor (chicken stock will do) 3) To add liquid, flavor and acidity (wine will do) Depending on your needs and what's on hand, any one of these three will help the dish.

Don't buy cooking sherry or cooking wine.

Buy a moderately priced bottle of sherry that can do double duty in your recipes and as part of your bar

Purchase a dry Sherry, popular brands that are reasonably priced are Taylor and Christian Bros.

any one that you would actually drink, that is not labeled "cooking sherry" - those have ton's of salt in them to discourage children & problem drinkers...
