find calorie/fitness calculator on the net, enter your stats, take 300-400 calories off that number and that's how much you need to lose weight.
5-8servings of fruit and veggies a day
8 glasses of water a day
5-6 small meals instead of 3 big ones (breakfast is the most important - make sure to get complex carbs like whole wheat bread, oatmeal, fruit etc)
4-6 times a week cardio for 30-50min, light weight training, many reps

You should really look at the serving sizes on the side of the food boxes/containers. A lot of people get together and decide what's enough to SATISFY average humans. Don't eat until you get full because you are stretching your stomach out little by little and the next time you eat you'll need more food to fill you up.
I've been a vegetarian for almost a year using serving sizes and everything and I dropped down to 110lbs. If you're working out but not losing weight you're probably building muscle and muscle is a lot heavier than fat.
Oprah Winfrey doesn't eat "food" after 8 pm. I've heard that that helps A LOT!!!

It sounds like you're doing everything correctly already, except for the "sometimes, not as careful as you should be".
To break dieting down to it's simplest form...your body burns a number of calories everyday, that number is based on a lot of factors like; age, sex, activity level, body make-up and other things. If you eat and/or drink less calories than your body burns, you'll loose weight. That's because after the body has used up all the food and liquid that you've put into it, it'll start using stored-up fat to fuel itself.
So the key to loosing weight is to eat healthy, vitamin rich foods so that your body isn't starved of anything essential and exercise more so that your body will burn more calories.

Besides reading labels check out the souch beach diet book it will show you what type of foods are high on the glycemic scale basically it teaches you what burns fat the fastest. jenny craig is pretty much the same idea but way to expensive. This book helped me get a basic idea of good food verses not so good.

There is a diet that's called the 50-25-25 diet. It works pretty good for me. and u can about a pound a week. In this diet 50% of your daily calories go to carbohydrates, 25% to proteins, and 25% to fats. One way to estimate your daily calories for maintaining your current weight (not losing weight) is to take your present weight and multiply by 15. That total number covers your metabolic needs for the day and factors in a little bit of light activity. Subtract 500 calories from that number and thats your starting point for daily calories for weight loss. This is a chart for how many calories you should eat per day from each group.

Well, in order to lose weight a basic concept of weight loss is not to go too many hours without eating because you can become overhungry, with your brain signaling starvation mode and stimulating your appetite even farther. Also, another good tip is if you want to binge, then a book recommends that you gargle minty mouthwash and wait 15 minutes. Your urge to eat should go away.
