Red Hot & Blue Catfish with Hush Puppies
Ingredients
For the hush puppy batter:
1-1/2cups yellow cornmeal
1/2cup all-purpose flour
2teaspoons baking powder
1/2teaspoon salt
1cup milk
1small onion, minced
1egg, lightly beaten
For the catfish:
4catfish fillets (about 1-1/2 pounds)
1/2cup yellow cornmeal
3tablespoons all-purpose flour
1-1/2teaspoons salt
1/4teaspoon ground red pepper
Vegetable oil
Fresh parsley sprigs for garnish
Method
For the hush puppies:
Combine cornmeal, flour, baking powder and salt in medium bowl. Add milk, onion and egg. Stir until well blended. Allow batter to stand 5 to 10 minutes before frying.
Rinse catfish; pat dry with paper towels. Combine cornmeal, flour, salt and red pepper in shallow dish. Dip fish into cornmeal mixture. Heat 1 inch oil in large heavy skillet over medium heat until hot (about 375°F on deep-fry thermometer).
Fry fish in batches 4 to 5 minutes or until golden brown and fish flakes easily when tested with fork. (Allow temperature of oil to return to 375°F between batches.) Drain fish on paper towels.
To make Hush Puppies, drop batter by tablespoonfuls into hot oil. Fry, a few pieces at a time, 2 minutes or until golden brown. Garnish, if desired.

INGREDIENTS 2 quarts vegetable oil for frying 3 cups cornmeal 2 teaspoons baking powder 1 1/2 teaspoons salt 1 1/2 cups milk 1/2 cup water 1 egg, beaten 1 small onion, minced DIRECTIONS Heat vegetable oil to 365 degrees F (185 degrees C). In a large mixing bowl, combine corn meal, baking powder, salt, milk, and water. Mix in egg and chopped onion. Shape the batter into small balls, approximately 1 tablespoon each. Use a long handled spoon to gently slide the hush puppies into the hot oil. Cook 8 or 10 at a time, until golden brown. Remove from the oil with a slotted spoon, and roll on paper towels to briefly drain. Serve hot.

I've eaten at Red Hot and Blue before and think this recipe would be similar:
FRIED CATFISH AND HUSH PUPPIES
1 jalapeno pepper, optional
1 1/2 tbsp. chopped onion
2/3 c. buttermilk
3 eggs
2 3/4 c. cornmeal
1 tsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
Salt and pepper
Oil for frying
1 1/2 lb. catfish fillets, about 6
1. For the hush puppies: Mince jalapeno, if using. Combine the onion, buttermilk, 1 egg and the jalapeno. Combine 1 1/2 cups of the cornmeal, the sugar, baking powder, soda, 3/4 teaspoon salt and 1/4 teaspoon pepper. Stir wet ingredients into dry. 2. Shape dough into approximately 1 inch balls. 3. Heat oven to 200 degrees. Heat 1 inch oil in a heavy frying pan over medium-high heat. When oil is hot (350 degrees), carefully add hush puppies. Fry until golden brown, about w minutes. Drain on paper towels and put on a baking sheet in oven to keep warm.
4. For the catfish: Combine remaining 1 1/4 cups cornmeal, 3/4 teaspoon salt and 1/4 teaspoon pepper. Beat remaining 2 eggs. Dredge catfish in cornmeal mixture. Dip into the beaten eggs and coat again with the cornmeal mixture. 5. Fry in the hot oil until golden brown, about 3 minutes per side. Makes 4 servings.

Cajun Catfish:
2 min
4 servings
4 catfish fillets (4 oz. each)
1/2 teaspoon cayenne pepper
1 ounce wheat flakes cereal
1/2 teaspoon black pepper
1 tablespoon paprika
1/2 teaspoon white pepper
1/4 teaspoon salt
1/2 teaspoon thyme
1/4 teaspoon onion powder
1 tablespoon oil
1/4 teaspoon garlic powder
1. Wash the fish fillets and pat dry.
2. In a bowl mix the ground wheat flakes and all the seasonings.
3. Pour the dry mixture onto a piece of foil or wax paper, and dip the fillets into the seasoning, coating both sides.
4. In a heavy cast iron fry pan heat the oil.
5. Fry the fillets for 2 minutes on each side.
6. Lay the fillets on a plate lined with a paper towel, cover with another paper towel, and pat to remove excess oil.

Southern Hush Puppies:

4-5 servings
vegetable oil
1 1/2 cups white cornmeal
1/3 cup flour
2 tablespoons baking powder
1 teaspoon salt
3/4 cup milk
1/2 cup onions, finely chopped
1 egg
1. Heat oil in a heavy skillet (about 2- 2 1/2 inches of oil) until hot.
2. Beat the egg and then mix in the remaining ingredients.
3. Make sure that your dry ingredients are all moist.
4. Using a tablespoon, drop balls of batter into the hot oil, about 2 inches long by 1 inch thick.
5. NOTE: I usually only cook about 4 or 5 at a time.
6. These should float in the hot oil, but not be covered by it.
7. You will need to turn these as they cook.
8. Fry until they are a golden brown and then drain them on paper towels.
9. Serve with fish- of course!

Baked Fillet of Catfish Creole
Ingredients:
4 each 6 to 8 ounce catfish fillets
Creole Sauce:
2 tablespoons butter
1 cup chopped yellow onions
3/4 cup chopped celery
4 cloves garlic, minced
2 bay leaves, whole
1 teaspoon chili powder
salt to taste
cayenne pepper to taste
1/2 teaspoon sugar
1/4 teaspoon thyme
1/4 teaspoon dill
1/4 teaspoon sweet basil
2 cups tomato sauce
1 cup water
salt
cayenne pepper
Prep:
In a heavy pot, sauté onions, celery, garlic and seasonings in butter until done (10 minutes). Add tomato sauce and water, bring to a rapid boil and reduce to simmer. Stir occasionally and cook approximately one hour. Add more water if necessary to retain volume. Season with salt and cayenne pepper to taste when finished cooking.
Place catfish fillets in a glass baking dish. Cover with Creole Sauce. Bake at 350 degrees F for 15 to 20 minutes. Serve at once with fresh steamed rice.

Hush Puppies
Ingredients:
2 c. yellow corn meal
1 tsp. salt
1/2 tsp. black pepper
1 1/2 tsp. baking powder
1 lg. finely chopped onion
2 eggs, well beaten
4 T. vegetable oil
Milk
Vegetable oil or other fat
To prepare, sift twice the corn meal, salt, black pepper and baking powder, second sifting into a medium bowl. Now add the eggs and oil; blend well with enough milk to make a stiff dough. Shape into small "fingers" about 3" long and less than 1" thick, or in small balls, about 1 to 1 1/2" in diameter.
Have the fat hot in your cast iron skillet; drop the hush puppies into it and let them cook till golden brown. Drain well and serve hot.
