Pastitsada

A simple and wonderful spiced-beef and macaroni dish.

Ingredients
2 tablespoons olive oil
1 pound ground sirloin
2 large yellow onions, halved, thinly sliced
1 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/8 teaspoon ground cloves
1/3 cup dry red wine
3 plum tomatoes, cut into 1/2" pieces
one 8 ounce can tomato sauce
8 ounces large macaroni
freshly grated Parmesan cheese [preferably Reggiano]

Method
Heat oil in a large heavy pot over high heat. Add meat and onions and sauté until brown, about 10 minutes. Reduce heat to medium and add cinnamon, cayenne, and cloves; sauté 5 minutes. Add wine, tomatoes, and tomato sauce; simmer until mixture is thick, stirring occasionally, about 10 minutes. [Can be made 1 day ahead. Cool slightly. Chill sauce uncovered until cool, then cover and chill. Re-warm before continuing].

Cook pasta in a large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain. Add to sauce and toss to coat. Season to taste with coarse salt and freshly ground black pepper. Transfer pasta to a serving bowl. Sprinkle generously with grated Parmesan cheese and serve.

I've got lots of ideas! Just depends what you are in the mood for.

My version of American Chop Suey

1 lb of lean ground beef
Polksa Kielbasa (how ever much you like)
Green bell pepper
Red bell pepper
1onion
1 small can of tomato sauce
1 large jar of Spaghetti sauce (your favorite kind)
1 box of elbow macaroni
All purpose seasonings


Season the ground beef with all pupose seasoning (sprinkle generously) add small can of tomato sauce and if you can get your hands on some sofrito then add two tbsps of that

(it is a spanish liquid seasoning You can find the Goya brand version in your Grocer's freezer for under $2 or in a jar in the Spanish food isle, its worth having for any meal, if you can use it then you don't need the onion I listed above but if not No biggie)

While beef cooks through bring water to boil for pasta cook that and add the jar of spaghetti sauce to heat, chop the kielsbasa and add that as well, chop the peppers (& the onion if you didn't get the sofrito) add those as well

When the meat is fully cooked add that to the pot with the ingredients and VOILA!!!!

This is an easy meal and its delicious!!! plus you can make a bunch of it and safe it for let overs the next day...its amazing!

If you are looking for something like chicken parm you can make pasta add spaghetti sauce and top with...

Oven Baked Chicken

Make three "dipping stations"

Season the chicken (try to use boneless skinless chicken breasts) with all purpose seasoning.
Cover in first bowl which you have filled with flour & a little extra seasonings

Dip in second bowl which contains two eggs beaten.

Cover in third bowl which has bread crumbs in it!... Italian or whatevr style you like.

Simply place it on a cookie sheet in the oven at 350degrees truning after 15 minutes for a total cooking time of 24-30 minutes.

Top the chiken with more spaghetti sauce and mozzarella cheese and you have masterpiece!

My friend just made this for my family. You will need a small container of pesto sauce (check the refrigerated section by the deli). A box of pasta (ziti noodles, they are round or angle hair pasta, any pasta will do). Get a Rotisserie chicken, take all the meat off, simmer the chicken in some chicken broth while you cook the noodles. Mix the noodles, chicken and pesto add cheese to the top and bake 15 minutes!!

Angel Hair Pasta with Sesame Shrimp


Ingredients:
2 cups uncooked angel hair pasta
1 pound asparagus, trimmed and cut into 1 inch pieces
3-5 small cloves garlic
1 cup sliced mushrooms
1/4 cup reduced sodium soy sauce
2 teaspoons sesame oil
1 tablespoon brown sugar
3 tablespoon chutney
2 tablespoons toasted sesame seeds
1 bunch scallions
1/3 cup vinegar
1 pound fresh shrimp or frozen shrimp, thawed

Prepare pasta according to package directions. Add asparagus pieces during last 3 minutes of cooking. Drain pasta and asparagus. Place sesame oil in a large saucepan heat over medium heat. Add garlic and mushrooms and saute for 3-4 minutes. Add soy sauce, brown sugar, chutney, toasted sesame seeds, scallions and vinegar and simmer for 3-5 minutes. Add shrimp and cook another 8 minutes. Toss shrimp and sauce with pasta and asparagus and serve.

Makes 4 Servings
Serving Size: 6 oz pasta and approx. 8 oz shrimp and vegetables

I'm gonna give you my favorite red sauce recipe!

Large can whole tomatos
4 small cans of tomato paste
Good red wine [the drinkable kind]
5 cloves of garlic
half an onion
1 carrot
1 stalk of celery
chayanne pepper
sea salt

food process celery, carrot and onion
crush garlic separatly

in a saucepan cook veggies with olive oil for about a minute
add all tomato paste and fill all the empty cans with wine and pour in to sauce pan
cook for about 4 minutes stiring constantly
cool
put into blender to puree and back into the sauce pan on low
open the large can of tomatos and insert scissors to cut tomatos [instead of cutting individually] it keeps the juice inside the can and cut tomatoes with scissors until finely diced
pour into sauce pan and simmer until hot

variations: add parmasan cheese or 2 shots of vodka

Spaghetti Pie

1 lb. spaghetti
1 lb. ground beef
1 onion, chopped
1 green bell pepper, chopped
1 tsp. garlic powder
1 (26 oz.) jar spaghetti sauce (your choice of flavors)
4 oz. cream cheese, softened
3/4 cup sour cream
4 green onions, chopped
2 c. shredded cheddar cheese

Cook spaghetti according to package directions. Drain, and spread evenly into a greased 13 X 9 baking dish.

Fry and crumble ground beef an onion until beef is no longer pink and onion is tender. Drain well. Stir in bell pepper, spaghetti sauce and garlic powder. Bring to a hard simmer, cover, and reduce heat to low simmer for 20 minutes.

Meanwhile, mix softened cream cheese, sour cream and green onions and spread evenly oven spaghetti.

When sauce is done, spread evenly over spaghetti and cream cheese mixture. Top with shredded cheddar, cover with foil, and bake 30 minutes in a preheated 350 degree oven. Remove foil and bake an additional 5 - 10 minutes.

Cheap, quick, easy & tasty! Any good box of Pastaroni, prepared as per the box but with bits of pepperoni, onions and any old green veggie cut up in it.

Serve with some freshly-baked breadsticks; provide olive oil and Parmesan cheese to dip them into.

Good apple cider to drink with it, or white wine if you prefer; ice cream sundaes for dessert.

See, I told you I could cook just a little tiny bit! ;-)

One good thing is take a bag of frozen shrimp the tailless ones and Ragu jarred alfredo sauce, zucchini, onions and garlic. Almost instant shrimp scampi.
