organic foods are grown without the use of chemical pesticides, herbicides and fertilisers, which can pollute rivers, kill off insects and therefore, as a result of a decline in insect population, killing off insect eaters eg birds, etc. Also herbicides kill off wild flowers. Over fertilising can also ruin the soil structure, making the soil poor quality, susceptible to erosion and less likely to produce good yields in future without putting more chemicals in. By organic farming you use natural fertilisers eg compost, and rotation cropping with legumes which put nitrogen into the soil naturally. Organic farming doesn't include not using heavy machinery, although some farmers are trying to reduce tractor use too, and cut down on fuel use and pollution.
