Depends what you want to use it for.
Red Hat if you want industry standard.
Knoppix if you want to boot off a CD
DSL if you want to boot off a small memory stick
Ubuntu / Suse if you want to use it single-user on a personal machine
Lindows if you want it to do its damndest to look like Windows.
That's just my personal choices... others may disagree. There are probably hundreds of linux varieties tuned to best-fit specific needs. Try some out, see how they fit *your* needs. Don;t feel aggrieved if I've missed one out... like I said, it's my personal choice.

Thats up to you. Check out www.livecdlist.com.download any of the OS replacements or Desktop distros. Burn the ISO as image to CD. Boot the CD from your CD drive. I suggest you start with Puppy Linux to see how much linux can do with an OS smaller than 100mb, then move on to larger distros to find one that fits your needs. Good luck and enjoy.

Ubantu is okay, but the best version of Linux is definitely the latest version of Red Hat.

It depends on what you want out of it. To get a good idea try going to google and searching for linux and go to their main page. if you are using it for security purposes try knoppix STD or phlak is what you are looking for; however if you just want a small install and live CD of linux you can try out the OS by using Ubuntu and if you like you can install it.
