Lamb bone is to remind of of the Pesach sacrifice, in particular the first one, done in Egypt, where the blood was used to mark the houses before the 10th plague. The Cracked, burnt egg is a reminder of the destroyed Temples..

They are symbolism, or in the case of the shank bone a reminder. True passover cannot be celebrated anywhere except in Jerusalem at the Temple, and without a temple since 70 AD what is celebrated is not truly passover, but the feast of unleavened bread. Since you can't have a true passover you can't have lamb to eat, so the shank bone is a reminder of the passover lamb, but no lamb is ever eaten at passover today. The roasted egg is a symbol of the temple sacrifices which were burned.

They symbolize the Passover sacrifices. There were two main Passover offerings- the paschal lamb itself, and another offering called the "chagiga".
Since the Temple was burned down, we can't offer actual sacrifices anymore, so we have reminders instead- the shankbone for the lamb, and the egg for the chagiga.
