My 6 year old paleontologist-in-training had something to say to this. "They were dinosaurs.....why care about anything else?" (We are so proud of his single-minded approach to the world. jk) But for real, all anyone can do is speculate about what really was going on way back then. Until someone can build a time machine and take us all back for a hands on field trip (hopefully no one gets eaten) then we will never really know.

There's plenty. Unfortunately, the dinosaurs were the big stars, and very few people are interested in the support cast. a pity really. There were some incredible amphibians.

The BBC did a whole set of films called "Walking with..." using very good CGI covering all these periods. You should still be able to find the DVDs.

there is lots known about the animals and plants of the period before and after the dinosaurs, but they are simple and not as interesting to most people as 50 ton lizards. the dinosaurs were very succesful species, lasting for millions of years. before this the species were changing rapidly so there is not as many fossils to study.
there may have been hundreds of transtional forms we could never no about because fossilisation is a very rare process, only species which are around for long times have a high probability of being fossilised.

Actually there is quite a bit that is known from the Archaeological record. You need to read some books on the period, however, because it's too extensive to be answered in a once paragraph reply on Answers.
