before you cook them,or after they have finished been cooked?
And any reason why?

Definitely right after they come out of the oil. It's the only time you can get anything to stick to them and if you do it before they are cooked, you won't have any left on them and your cooking oil will deteriorate faster with the contaminate in it.

If you are deep-frying them, never add the salt before you cook them. It will break down the oil. Salt them the second you take them out of the oil. The salt will stick and dissolve in the hot oil left on the chips. If you are baking them in the oven, add salt before you bake them. That way the salt will adhere and dissolve from the heat in the oven.

I add salt immediately after they're finished cooking, when they're still piping hot. The grease hasn't fully drained off yet, and the salt sticks better. I've never heard of adding salt before cooking.

I salt my chips before cooking so as the chips itself imparts a nice taste...i do it by putting in cold water with salt and a bit of sugar...let stand for a few minutes before I cook.

The salt sticks better when the chips are hot. So the best time to salt chips is when they are done cooking.

Right after you are finished cooking.That is how we make our tortilla chips.

I think if you salted them before you cooked them then the salt would just come of in the oil.

Even though I am no fan of salt, I know it's best to season them after they've been cooked and still warm. It helps to adhere any seasoning to the chips.The little bit of heat helps 'melt' the seasoning to it.

I will let them drain for a few minutes until most of the dripping stops and add salt.

That is the way my Chippy does it and it works for me
