The sauce is to compliment a chicken dish. So not too thin, yet not too thick.

Just add finely chopped garlic, and season with herbs and ground black pepper. You can either add a little Tobasco for a kick, or ginger instead for a different flair.

I came up with this when I was overrun with garden tomatoes. It adapted very well with canned. First & most important, slowly sautee a lot of chopped onion in a generous amount of extra virgin olive oil. Use about 1/4 cup as it will become part of the sauce. Take your time on this step, it's worth the wait. Stir the onions constantly over medium heat with a good dash of salt until they are carmelized & sweet. After onions are done, add 4 to 5 cloves of diced, fresh garlic.

At this point, add one large can of whole tomatoes. You can either chop before adding or break them up as you are stirring. Add some fresh herbs to taste. I love fresh basil & oregano with this recipe.

The tomato juice will have cooked down some by now. Add a couple of generous glugs of red wine. It doesn't have to be expensive, but it does need to be good enough to drink on it's own.

Cook this down until the wine has reduced some. Make sure there is some liquid left in your pan so your pasta won't be too dry.

Toss with hot, al dente pasta & top with chopped, flat-leafed parsley & freshly grated parmesan cheese. This is great with everything or just on it's own. I promise.

Fry some onion and garlic in a little butter for a richer taste. Add the chopped tin tomatoes, these have a better flavour as they hold less water. Let it thicken slightly, add some wine, let boil, and if it is too thin, stir in a tale spoon of mashed potato. if you dont have any mashed potato lying around, just make some using one small new potato.

Good luck.

Tinned tomatoes
Onions
Garlic
Herbs
Black pepper
Bacon - roughly chopped

Fry the onions and the bacon, add all the other ingredients and leave to simmer to allow the herbs and garlic in infuse. Serve with chicken and boil the rice with a stock cube just to add flavour. You could add some chili to spice things up! Yummy.

if you are going to make tomato sauce yourself use real tomatoes... if you are going to make them out of tinned ones, you might as well save yourself the trouble and just buy an off the shelf tomato sauce...
