1)Prawn, asparagus and macademia stir-fry:
Serving size: Serves 4
Cooking time: Less than 30 minutes
INGREDIENTS
1 tablespoon peanut oil
20 green prawns, peeled, deveined, tails intact
2-3 garlic cloves, crushed
1 teaspoon grated fresh ginger
1 bunch asparagus, trimmed, chopped
¼ cup water
1 teaspoon cornflour
100g macadamia nuts, toasted
1 tablespoon oyster sauce
1 tablespoon soy sauce
Steamed jasmine rice, to serve
METHOD:
Heat oil in a wok or large frying pan on high. Stir-fry prawns, garlic and ginger for 2-3 minutes, until prawns change colour.
Add asparagus. Stir-fry for 2 minutes, until just tender.
Combine water and cornflour in a small jug, stirring until smooth.
Add macadamias, cornflour mixture and sauces to wok. Stir-fry for 1-2 minutes, until hot and bubbly. Serve with jasmine rice.
2)Geoff's country carrot soup:
Serving size: Serves 8
Cooking time: Less than 60 minutes
INGREDIENTS
20g butter
1 tablespoon olive oil
4 onions, chopped
2 garlic cloves, crushed
1½kg carrots, peeled, chopped
2 medium potatoes, peeled, chopped
6 cups chicken stock
1 cup milk
cream and parsley, to garnish
crusty bread, to serve
METHOD
In a large saucepan, heat butter and oil on medium. Sauté onion and garlic for 4 to 5 minutes until onion is tender.
Add carrots and potatoes. Cook, stirring, for 2 to 3 minutes.
Blend in stock and milk, and season to taste. Bring to the boil. Reduce heat and simmer, covered, for 25 to 30 minutes until very tender.
Using a hand blender (or food processor), process until smooth. Garnish soup with a dollop of cream and a sprinkle of parsley. Serve with fresh crusty bread.
3)Asian grapefruit salad:
Serving size: Serves 4
Cooking time: Less than 30 minutes
INGREDIENTS
2 cups shredded, cooked chicken
8 small cooked prawns, peeled, de-veined, tails intact
1 small carrot, cut into matchsticks
1 Lebanese cucumber, halved, seeded, sliced
1 cup bean sprouts
80g snow peas, trimmed, halved
1 ruby red grapefruit, peeled, segmented
¼ cup mint leaves
¼ cup coriander leaves
¼ cup toasted, unsalted cashews
Lime dressing
¼ cup boiling water
1 tablespoon caster sugar
¼ cup fish sauce
2 tablespoons lime juice
1 tablespoon white vinegar
2 garlic cloves, crushed
METHOD
1. In a large bowl, combine chicken, prawns, carrot, cucumber, sprouts, snow peas, grapefruit, mint and coriander.
2. Lime dressing. In a small jug, whisk together boiling water and sugar until sugar has dissolved. Whisk in fish sauce, juice, vinegar and garlic.
3. Pour dressing over salad and toss well. Serve sprinkled with cashew nuts.

One Dish Chicken Bake
INGREDIENTS
1 (6 ounce) package (168g) chicken-flavor stuffing mix
1 1/2 cups (355ml) hot water
1/4 cup (55g) butter, cut into pieces
4 skinless, boneless chicken breasts
1 (10.75 ounce) can condensed cream of mushroom soup
1/3 cup(80ml) milk
DIRECTIONS
In a large bowl combine the seasoning packet from the stuffing mix with the hot water and butter. Let stand until butter melts. Stir in the stuffing crumbs, just to moisten, and let stand for 5 minutes.
Preheat oven to 375 degrees F (190 degrees C).
Place the chicken down the center of a 8x12 inch baking dish. Mix together the soup and milk and pour mixture over the chicken. Spoon some of the stuffing over the chicken breasts, then spoon the rest along the sides of the chicken. Bake in the preheated oven for 35 minutes or until the chicken is fully cooked and the juices run clear.

Soups and stir-fries are easy one-dish meals.
Stir-fry: any mixture of chopped vegetables and any kind of meat. Toss it all in a skillet and fry it with a bit of oil
Soup: so many options I can't begin to cover them. Get a big pot, heat water, season it (salt, pepper, maybe oregano), toss in veggies and some noodles and let it all boil for a bit.
