I usually like to make those complicated recipes that have 47 ingredients and require three hours in the kitchen. However, I had this cake at a potluck one day, and it's now my favorite easy dessert.
Sunshine Cake
1 box yellow cake mix (nothing fancy - no pudding, etc.)
1 can mandarin oranges
1 can crushed pineapple
1 container Cool Whip
Drain the mandarin oranges, saving the juice. Make the cake mix according to the directions on the box, but substitute the juice from the oranges for half of the water. Stir in the oranges until they've broken up into little pieces. Bake according to the box and let cool completely. Drain the crushed pineapple and mix into the Cool Whip. Spread over the cake and refrigerate until ready to serve. This is a dessert that's perfect on a summer day because it's cool and light.

Jello cake is my favorite! Its so good, especially this time of year.
You need a regular size tub of cool whip, strawberry jello(or probably whatever kind you like), and white cake mix.
Bake the cake like normal, and let it cool. After it is cool, poke holes all thru it with a fork. Next, you make the jello, but while it is still liquid, you pour it on the cake. It soaks into the holes and the cake. Cover and put in the fridge for it to set (let it set for at least a few hrs, you can tell when its ready b/c it won't look soaked, it will be firm again). When it is ready, cover w/cool whip. You can also add strawberrys or any kind of fruit. Put it either under or on top of cool whip. This is soooo good. Keep cake refridgerated.

One of the easiest things to do with a cake mix that is also low(er) calorie is to mix it with a can of diet coke. Then bake it according to the directions on the box. It will be a little more like the consistency of brownies, but it's quite tasty and better for you than baking the cake with eggs and milk and oil.

I was at the checkout today at the grocery store & on the magazine rack they had a cookbook magazine that was all cake mix ideas & recipes.
I use to make a devils food cake & add 3/4 of a can of cherry pie filling to the mix before baking(it replaces the oil)& use chocolate frosting on top when cool. Then put a little of the remaining cherries on top of the frosting. Everyone really liked it.

http://www.kitchenemporium.com/cgi-bin/kitchen/prod/06cc21206.html
you can get them alot of places but you have to look (i am not suggesting getting it off this website but thats what it is)
then buy two boxes of cake mix and 2 boxes of powder sugar
make both of the boxes different, bright colors, and find another bright color for the frosting. then make chekered cake! just because they look good people actually think they taste better. haha
have fun!!!!!

you could get a few different kinds, cook them all up and layer them with cream in between. then fresh fruit or strawberries on top. or make a yummy truffle with jelly and custard. you can make cupcakes or muffins with them. or just use them as a base and add your favourite things. maybe some dates or sultanas. or chocolate or lollies.
