We buy either the whole fruit frozen or already segmented frozen parts of durian in Vietnamese supermarkets. Some whole food markets also have the frozen segments available. The problem with the frozen segments is that they can be overripe by the time they are frozen in the country of origin.
There's a trick to picking the frozen fruit to get one that's just ripe but not overripe. Ask someone in the store to help you.
It's best to eat it fresh out of the fruit once it is defrosted and at room temperature. Open the fruit up and take out a segment and eat it. Most people first encounter it as an overripe piece of fruit, processed into a shake or dessert, or when it has been exposed to the air for a while. And then they never want to go near it again. It is supposed to be the perfect food - perfect ratio of carbs to fat to protein - and it has a lot of minerals. Those are the culprits in the smell that develops once the fruit is open. If you have a Vitamix mixer, you can also create delicious concoctions with durian and vanilla, durian and raw chocolate, durian with a layer of young coconut meat, blended, on top (seals in the smell somewhat if you keep it in a tupperware container), with carob, with vanilla and chocolate - in shakes, raw cake/pie, ice cream - it's all yummie. Durian should be eaten as fresh (aka defrosted) as possible. Dispose of the outer rind and the pits as fast as you can (doublewrap in plastic bags) in a garbage container which is not inside the house or offensively close to neighbors' sense of smell.
