yes if you have the right receiver and audio output connections you can use coaxil but use optical if you have that connection. the red and white (analog) connections are not capable of real 5.1 surround sound transmission

you may hear no difference between optical and coaxil, but the optical is not subject to electrical interference

A coaxial cable can carry 5.1 dolby digital, DTS, or stereo PCM sound, among others, it just depends on the source sound. Most receivers these days will decode both digital formats. Some DVD players will decode it themselves and then you can transfer the 6 channels of sound over 3 pairs of RCA (red & white) cables if your receiver has 6 channel analog inputs. The cable involved will make less of a sound difference than the D/A (digital to analog) converters that decode the signal. Also, an optical digital cable can be used instead of a coaxial cable.

Yes, it provides a digital platform for (i.e. Dolby Digital and DTS) surround sound. In theory the digital coaxial connection is supposed to sound better than the traditional analog connections with the added convenience of only one cable.

Yes, coax cable can be used for digital audio, such as Dolby Digital.

Dolby Digital can have up to 6 channels of audio, Red/white (analog) is just stereo
