As long as it is not moldy or mushy, it should be fine. I have potatoes from like two weeks ago and they are fine. even if they sprout, just cut off the sprouts and cook it.

Potatoes last over winter usually especially if stored cool and dark. But this time of the year they are getting "old" starting to grow and can get moldy and mushy quicker then say in October, because it soon going to be "new" potato time Yeah!! Anyway, as long as you potato is still hard and not moldy or mushy (you can even just remove the growth parts) then I'd say go for it!!! at 8 days it should still be just fine.

Potatoes do keep for a long time as long as they are dry and cool.

Here's a helpful hint: When you buy a bag of potatoes, smell them. They should smell like dirt, if there is a rotten potato you will smell it immediately. Once a potato spoils, it can quickly cause the rest to start spoiling. They will smell very bad, unmistakably rotten. I always give mine a whiff before buying. Sometimes I get some strange looks from other shoppers though. ha ha

Potatoes are known for their longevity. 8 days is nothing! Totally fine to cook. Trust me, the potato was already old when you bought it. And in the olden days, potatoes were stored over the winter and eaten. So not really a big deal. For future reference, store potatoes in a dark, cool, dry place to keep them longer. your potato no offence please, [note spelling, the e is only added if you are talking plural and then it is potatoes], is probably a lot older than 8 days, it is good as long as it is not turning green [then it could be poisonous] Even if it is sprouting a little, cut this section out and use it.

Raw potatoes keep for months and months, but since it's the beginning of spring, you might want to be careful. If it is green (or squishy or moldy), don't use it. If it has sprouts, you can just pull these off and check if they are green underneath.

a potatoe is a potatoe...unless it starts growing roots then it's kinda scary...it's still ok to cook but if it tastes musty there might be something wrong with what temperature it's at
