Also why should the body be wrapped in three white sheets instead of one? And is there any symbolism behind the colour white?
NOTE: I am looking for the symbolism behind these actions, not just because this was done when the Prophet was buried.
And if possible please provide a source.

I'm afraid you are at a loss with this question. Most costums (specially religious ones) cannot be traced that easily. All those things do have a symbolic background, but after centuries, a practice looses its meaning and is carried out just because. Anyway, I hope somebody can answer this for you.

1. Throwing three handfuls of dirt "while" covering a grave as a sign of rememberance that death is something that ever person will experiance.

It's more like a recall to see where you'll end.

2. The body is wrapped in cloth to cover it. One piece of cloth might become easily removed or slipped off the dead person's body. At the same time a woman is covered with 5 layers (same reason).

3. White cloth is used as a sign of purity. It's to remind everyone that the only thing that will be taken with a person from this life is a piece of cloth and the deeds that he/she has gained in life.

Yes, there is hadith behind it, that talks about this.
you know all the Muslim people who die are burred the same way. they all are facing the same directions. they all wearing the same white cloth.
is just like Mecca. everyone is wearing 3 pieces of white cloth. you know why... read the quran. or go to the mosqe. they will explain it to you. and i can't remeber what hadith and quran chapter that talks about this.
