Made a yummy one the other night.

1 T. margarine or butter
1 (14.5 oz.) can sauerkraut, undrained
1/2 c. uncooked white rice
1/2 c. water
1 lb. lean ground beef
1 (8 oz.) can tomato sauce
Salt and pepper to taste

Melt margarine in a large skillet over medium heat. Evenly spread undrained sauerkraut in skillet. Spread uncooked rice over that. Pour in water. Crumble raw ground beef evenly over that. Season with salt and pepper. Pour tomato sauce evenly over that. Cover and bring to a hard simmer. Reduce heat and simmer 35 minutes.

It sounds weird, but is SO good!

My favorite way to eat sauerkraut is on a hot dog... With a Cold Beer.
I eat this every time I go to New York City. There is a Nathan's Hot Dog stand near the gate at Laguardia Airport. I get a hot dog with sauerkraut and a cold beer.... Makes the wait at the airport not so bad.
My mouth is watering thinking about it. I wish I had one right now!!!

I like to take different types of sausages, cut them into 1" pieces, put them on a bed of sauerkraut and place them in the oven for 30-45 min at around 375 until the sausages are hot.

I buy the sweet & mild bavarian style of sauerkraut & cook it with some smoked sausage sliced about 3/4 inch thick for about 30 minutes on low heat. Serve with mashed potato's for sauerkraut & weinies(my mom used hot dogs) but I prefer smoked sausage or kielbasa.
It is also great on Brauts.

Coincidentally, tonight for dinner I made Ball Park dogs with sauerkraut.....deeeeee - licious.
Growing up we had a lot of German food which included many sauerkraut dishes...sauerkraut and pork for one....
big pot of sauerkraut, potatoes, and a smoked butt or pork chops all cooked together.
Frankly, I'll eat sauerkraut right out of the can or jar if someone doesn't take it away from me first.
