i noticed there is a slight greenish color on my red and yellow pepper mostly inside. is it safe to eat? does it have to do with the maturity level of the pepper? thanks.

Yes, sweetie, it's just fine and natural. It's just slightly young and naturally green.

It does have to do with the maturity level of the pepper. Red, orange and yellow bell peppers all start off green. Bell peppers change colors and get sweeter as they ripen. So, no, it won't hurt you. It just didn't get fully ripe and is the same as eating a green bell pepper.

You are correct it is only maturity . They both start out as green and as they mature they turn red or yellow depending upon the variety. Usually the red pepper goes from green to brown then red as it ripens.

If it is green because the pepper isn't fully ripe yet, then yes you can eat it. If it is gree because of mould, then no, don't eat it.
