Sure, they are probably screwed down but they are heavy as all get out, you may want to just have the cabinets refaced. That way they don't need to be removed.

Yes it is! its simple all you do is remove all your cabinets your counter top is going to have a 5/8 or 3/4 plywood in the bottom of the cabinet which is used to support the weight of the counter top(if not it will be much easier) used a blade saw machine and cut along the side of the bottom of the counter top "not counter top"cut cabinet. Be care full not to cut any electrical cables check your cabinet for electrical cut outs.
Once you have cut along the bottom side of the counter top remove counter top and flip over try to remove your plywood from the bottom of the counter top with a crowbar if it has plywood if not then your all set to build your new or install new cabinets and this is how much i can help you. Good luck!

just replace your cabinet doors and drawers! it's a lot easier to strip the paint from the flat surfaces of the cabinet fronts, and if you go to a good local cabinet company, or have a craftsman in your family, you can have new fronts custom made, or they can match your current cabinet sizes.
you won't have to disturb the granite at all.

Yes it is possible. Make sure your new cabinet are the same size as your counter top. It will work just fine. Don't let anybody tell you different either.

If you had the exact same cabinet arrangement you could it is just attached with silicone caulk. Be extremely careful moving it it seems very hard but can break if not transported correctly.
If you wanted to change the layout, it might be possible to have the stone reworked, but you would have to check with a stone fabricator if they would/could do it.

If you like the cabinets you could always strip the paint off. If not, yes you can. Just be careful.
