- grease a pan (usually a 9X13)
- Lay pre-prepared lasanga noodles
- layer of tomato meat sause (my dad added bacon or italian sausage which adds flavor [and calories] but was really good): you can make your meat sauce how you want by adding spices, favorite vegetables, etc
- another layer of noodles
- another layer of meat sause
- dry cottage cheese
- noodles
- mozzarella cheese
bake at about 35 for 45-60 min (or until cheese is golden brown and it is warm in the middle)
Note: you can have as many layers as you want.. it's up to you

Easy, Low-fat Chicken Lasagna:
1¼ hours 30 min prep
8 servings
2 boneless skinless chicken breast halves, cooked and diced
2 cups shredded part-skim mozzarella cheese
8 tablespoons freshly grated parmesan cheese
1 (24 ounce) container fat-free cottage cheese
1 small yellow onion, diced
1 tablespoon olive oil
12 lasagna noodles
1 yellow bell pepper, diced
8 basil leaves, julienned
1/2 cup fresh parsley, chopped
1 (24 ounce) jar spaghetti sauce (I like Newman's Own)
1 tablespoon coarse garlic salt
1 teaspoon cayenne pepper
1. Preheat oven to 375 degrees.
2. In 1 T olive oil saute the onion and bell pepper until translucent.
3. Add chicken and set aside.
4. Spray a 9x13" pyrex dish with cooking spray and spoon about a half cup of the spaghetti sauce on the bottom.
5. Mix the fresh herbs, garlic salt, and cayenne straight into the container of cottage cheese.
6. Layer 4 uncooked lasagna noodles, 1/3 cottage cheese mixture, 1/3 chicken mixture, 1/3 of the remaining sauce, 1/3 mozzerella and 1/3 parmesan.
7. Repeat this process until finished.
8. Cook, uncovered, for about 45 minutes or until bubbly and golden brown on top.

When it comes right down to it, lasagna is about the easiest "fancy" meal there is, and you can add all sorts of stuff to it. Stick with no-boil lasagna noodles. If you can get the refrigerated ones that are still soft, they're the best.
In a small bowl, combine 8 oz ricotta cheese (I like part-skim), a couple handfuls of shredded mozzarella or mixed "pizza" cheese (usually a mix of mozzarella, parmesan, romano and provolone), and one egg. Stir it all up until you can't see the egg anymore.
Chop up some veggies that you like. I use carrots, zucchini, yellow squash, and jarred roasted red peppers. If you like, thaw and squeeze the liquid out of some frozen chopped spinach.
Spray a 9x13 pan with non-stick spray (it makes cleanup much easier), then put a few tablespoons of tomato sauce, crushed tomatoes, or spaghetti sauce in the bottom and spread it around. Place noodles over the sauce. Dot half of the cheese mixture over the noodles and spread it around. Spread some of the chopped veggies over the noodles. Add more tomato sauce. Put your next layer of noodles on, the rest of the cheese mixture, the rest of the veggies, and more sauce. Put the last layer of noodles over it and spread a few tablespoons of tomato sauce over the top. Sprinkle the top heavily with shredded mozzarella or pizza cheese. (If you can get the fresh mozzarella sold in balls, slice that up and put it on the top instead).
Bake at 375 degrees for 40 minutes. Watch the top so it doesn't burn - you may have to put foil over it. Let it cool for 10 minute to allow it to set up a bit.
This recipe does not contain meat, but if you'd like, try cooking up half a pound of italian sausage and adding it to one or both of the middle tomato sauce layers.

Here is an excellent basic recipe.
Don't fall for other versions that substitute cottage cheese for ricotta. You can use spinach instead of parsley. Also skip the sugar-- that is not necessary.
You do not need a dutch oven, A deep saute pan will work.

well my mom makes a really goood lasagna and im only 14 and i can make it by myyself but she doesnt have an actual recipe so if you go to
www.copykats.com
and type in a restaurant or lasagna then they give you the recipe from the restaraunt!
