Ideally I would like to find a breed that is a good egg layer, but that also has good meat quality. I would like chickens that are more docile than aggressive. Also, would you reccommend chicks or started pullets?

Aggressive? Chickens? Reds meet both criterion. Leghorns, yes. My araucanas are huge and lay well. The fun twist is they lay green eggs. REALLY!
Pullets will get you started quicker, of course, if you can find them locally. But you can get a mitt full through the mail in a few days. Click "hen breeders" & take your pick. Also, if you care about them being more approachable toward you, raising them from "day one" will do this ( and kids ADORE this stage).
If you're going to eat them don't name them...or else...

Banties are always nice, they are relatively good layers, are quick, and much smaller than average chickens. I'd suggest Partridge Rocks, Araucanas (blue eggs!), Cochins (very good setters - been known to steal eggs!), Buff Rocks, Japs, or maybe even Brahmas. I buy most of my day-old chicks from Murray McMurray hatchery in Iowa. As good of layers and setters they are, they usually don't get big enough to eat.

Banty's or Guineas...cause they are so cute...ooops you said quality meat and good egg layer...Rhode Island Reds?
