According to the theory of evolution, the giraffes who had longer necks were better nourished because the could eat leaves higher up in the trees which the other animals were not able to reach. Since these longer necked giraffes were able to eat better, they could live longer, reproduce more and produce young that were better able to survive. This creates and increase of long necked giraffes in the population, and if the trait is beneficial enough (as it apparently was) they will eventually dominate the population.
