i said it a little wrong. what is the pitch and trim for on fsx. when i descend climb and land i could do those things good until i got a joy stick!! so about what should i put my pitch and trim on while climbing descending and landing etc

The airplane should be trimmed to maintain whatever flight attitude and performance you want. In the case of landing (in FSx or wherever) trim for approach speed so that you don't need any input from the joystick to maintain the approach. Then, use the joystick for small corrections, and for the flare at touchdown.

I don't know about your video game, but a real airplane of any size requires the use of pitch trim. Unless you happen to be a real strongman. Those control forces get heavy, so it's much easier to roll the pitch trim wheel or toggle the top hat on the stick.

trim is generally good to control climb/decent/altitude without the use of autopilot or too much elevator control.
Usually you dont need it too much but i generally try to add a bit of upward trim when landing to make the flare a bit easier and slow down a bit.

you use some trim to steady it and so you don't have to put a lot of input (movement) into it, just make shure you have your trim nuetral for take off

you use trim and control the pitch of the aircraft with the power and stick until touchdown
