My parents are very strict, sometimes, and I'm 14. Examples:
-In bed by 8
-No TV after 4PM
-Can't be on the phone for more than 15 minutes
-Must clean house everyday
-No dating
-No doing anything unrelated ot school
-No waking up before 6AM

And other times the do NOT care, examples:
-Can do anything I want, literally.

It's is really annoying, bith of my parents are bipolar, and I never know what mood they are in. They are both athiests and yell at me for my beleifs{veganism, straighedge, eg.) They think they are bad and rarely let me listen to music around them and they think I am a Satanist.

I'm a Taoist and I've never drank or done drugs, and I'm a virgin. I've never snuck out of my house, or anything of that sort. I'm a good kid, and they are convinvced I am bad, and don't trust me at all,. despite the fact I have never gave them a reason to. It is really beginning to get to me, what should I do?

Just try to study hard and get good grades. As soon as you are 18 or graduate, you can have your freedom. Until then, they are your parents. No advice--except just count the days--I guess. I really don't think talking to other adults about your situation would help--as long as they are not abusing you.
Good luck

In 10 or 20 years, you will thank them for the strictness. You will see in the 10 to 20 years down the line, the friends that you have now, that won't make it to that point of the journey with you. You will live and you will be a viable person to society, it might not seem like it now, but you will.

family counseling and therapy sounds like it's in order in this case! for sure!

an objective third party with no self-interest in your family's case will be able to tell it like it is and separate the fact from the fiction.

you cannot fix your family yourself, get some help wherever it's available!

Sorry to say i think your parents need to talk to someone. have you tried calling the kids help line (try from school) or go talk to the school councilor for yourself to see what they recommend.
