Buy chicken breasts, regular rice (not minute or parbioled), milk and 2 cream of mushroom soup. Put 2 cups rice in 2 cups water, bring to boil, then lower heat to minimum, cover and let cook exactly 20 mintues, then remove form heat. Mix 2 cans soup with 1 can milk, mix in spices (pepper, paprika, onion powder, garlic powder, whatever). Spray (PAM) or foil line backing pan. Spread rice and cover with soup mix. Lay breasts (chicken's, not yours!) in pan. Loosely cover with foil and cook 40 minutes in oven preheated to 350deg.

Ham. Get a small ham, it can have a bone or not...better yet get a ham steak. Heat it according to directions. Then the last 10-15 minutes add a glaze. The easiest and best glaze is brown sugar 1/4-1/2cup depending on the size of the ham. Add mustard (the hot dog kind) until it's a moist and sticky mess. Score the ham (slices-not all the way through the ham just a little cut across the top) diagnally across then the other way to form diamonds. Dribble the sugar mixture over the ham and spread it around. Then finish cooking it another 15 minutes.
I like to serve it with scalloped potatoes:
2 raw potatoes pealed and sliced thinnly (put in a bowl and cover in water to keep from turning brown)
1 Tablespoon butter/margarine
1 slice of onion chopped up
salt and pepper
1 Tablespoon all purpose flour
1 cup milk
Cheddar Cheese grated (about 2/3 cup give or take)
Put the butter in a pot on the stove and melt on medium heat. As it melts add the onion. Cook the onion until it is translucent (almost clear not brown). Add the salt and pepper; if you're not sure how much, just a couple a shakes, you can add more to your own serving later. Add the flour, stir it around for maybe 15 seconds then add all the milk while stiring (you can use a whisk for stirring if you have one). Turn the heat up to med-high and continue to stir until the milk starts to bubble a little, turn down the heat to about medium and continue to stir for about one minute, the milk should thicken. When it does add half of the cheese and stir until it is melted. Drain the potatoes and put them in your casserole dish, pour the sauce over the potatoes, top with cheese and cover the casserole dish with a lid or aluminum foil. Cook in the oven for 1 hour take off the lid and test the potatoes with a fork. If they are soft, they are done. You can add croutons at this point and put the potatoes back in the oven for 10 minutes or just serve them.

You can use Campbell's soups for casserole bakes and add chicken breasts or tenders...add some rice towards the end if its too soupy. I make a lot of home made soups. Just use chicken or beef broth, tomato sauce, etc. I use fresh celery, carrots, zucchini, onions, cans of kidney beans, black beans, etc. Add some pasta to it...salt and pepper. Makes great dinners! Add some salad and bread...WOW! Also, I make Mexican dishes by using browned hamburger meat with taco seasoning or enchilada sauce. Use a round glass baking dish. Add a tortilla, then add some meat, tortilla, Mexican rice, tortilla, re fried beans, tortilla, meat, tortilla, and top it with some queso sauce. Bake it to get everything warm and top it with green onions and tomatoes! Another great dish. I boil pasta also and add different sauces that you can buy. Top it with Parmesan and bake some Italian bread to toast it. Spread some cheese spread on it. You can find some great ones near the deli section of the grocery store. Easy dinners - Stir-fry's a great & cheap too. Get either a bag of frozen veggies from the supermarket of just cut up some cabbage, broccoli florets, beans & buk-choy. Brown of either beef, pork or chicken stripsin a wok(or frypan if you don't own a wok - Just make sure it is really hot), add your veggies & suace & a packet of fresh egg noodles (you can but them in the asian section of supermarkets) I don't buy bottled sauce though so i use a good splash of Soy Sauce, some oyster sauce & a bit of Ketjap Manis. Yummo!
Also you could make a really easy Apricot Chicken. Just buy a large BBQ chook from a takeaway shop, pull of the skin & dice into small pieces. Put in a large casserole dish & add a packet of French onion Soup mix (dry) & a large can of apricot nectar. Bake in oven on aprrox. 180 Degrees for around 20minutes & serve with rice or mash potato & beans

What to buy:
1lb boneless, skinless chicken breast
Sliced ham or prosciutto
Provolone or mozzarella cheese
Garlic, mushrooms (if you like them)
Marsala wine (it'll be near the vinegar in the grocery)
butter
pasta (any kind)
Rinse chicken, pound with the flat end of a meat tenderizer until they're pretty thin.Melt 2 tbs butter in a saucepan on med heat, and heat oven to 350. Roll ham and chicken together (chicken stays on outside), place each little roll into pan, brown on all sides. Place into a baking dish and throw it in the oven for about 30 min. Meanwhile, Melt 2 add'l tbs into the pan you just used, Throw in a couple of crushed garlic cloves, the mushrooms, and a generous splash of Marsala wine- let it simmer for a few minutes until it thickens up a little. Pour on top of chicken, put back in oven for about another 8min.Pull it out and throw some cheese on top. Cook the pasta, put some chicken and sauce on top.
Voila!

Mexican or Italian type meals are the easiest to prepare and cook. You can easily make tacos or enchiladas. Even easier is "revamping" canned spaghetti sauce to make it "homemade".
