Mexican white rice - from web

Let's heat 3 tablespoons of oil over medium heat, your choice. Olive oil would be fine.

Add 1 cup of long grain white rice, uncooked stirring often. When it starts to brown, add 2 cups of water or chicken broth, 1 teaspoon of salt and bring to a boil.

Cover, simmer over low heat for about twenty minutes. Remember, this is a practice run, so we can check every 5 minutes or so. If we see our liquid absorbing too fast means fire is too hot.

Turn down and add more water, not fast enough, turn fire up a little. What's important is the cooking time about 20 minutes.

If you see you have too much water. Trying going Spanish. Add some left over chicken, vegetables such as left over peas and carrots, etc, even try a few spices. Simmer another 5 minutes, we can call it pot luck rice, what ever you end up with, it will be good.

A good start for whatever rice you wish to make. Play with it, have fun, after a time or two you will be a rice cooking expert guaranteed.

One last comment in my search for Spanish rice recipes, I find a lot of recipes saying to wash your rice and let dry. Nothing wrong with that, if that is what you want to do.

Between me and other Mexican restaurants, there are thousands of gallons of perfect spanish rice cooked everyday not washed.

Here is a Spanish rice recipe fron Southern Food, that looks simple.

Use the recipe on the package and put a little olive oil in it but use just a little less water so it wont come out mushy.

This is how I make my rice for Puerto Rican rice and beans. Just plain white rice.

Lala, some spanish fry slice of onion and pepper in oil, wash rice and add to hot oil, stir till it turns white, then add water with cubito teaspoon salt. Add water till it is 3/4" above rice. Boil over medium till water reaches level of rice. Lower heat to low and cover.
Puerto ricans put water in pot first, then add rice I am not good at this! Also, medium grain rice is good for puert rican recipies such as arrroz con gandules. However you might prefer jasmine or basmiti, very tasty!!!
