I'd boil the chicken in a little water until done, then defat the broth and season it with onion and garlic powder, celery salt or seed, and a little poultry seasoning.

Use the broth thickened with a little flour to make a gravy for the chicken which you have cut off the bone into large chunks. Add some diced cooked celery and peas and/or carrots if you have them, then pour the chicken mixture over the cornbread squares which you have reheated.

Serve with a tossed salad and some fruit for a great and easy meal!

place chicken peices in baking dish cover with crumbled cornbread, drain a can of corn and pour over top, two cans tomatoes any style do not drain. pour over all gently mix together , bake at 375 till chicken is done, this is the bomb over porkchops but very very good over chicken, can mix in a little salt and pepper if you want

ooh

if you have oil for frying, make a simple batter from eggs and flour, water, salt and pepper to taste, if you like it spicy add some tabasco or louisiana hot sauce, i like the batter thicker so it coats better

pat dry the chicken with paper towel, and dip in the batter with tongs and slowly lower into hot oil (400 degrees or so)

use your meat thermometer to check when it is done, poke the meat, but not to the bone

with a simple salad, you've got a pretty filling meal!

I would boil chicken, then season and brown under broil - meanwhile use chicken broth to make stuffing like one mentioned in other answer
