linguini with red sauce and italian sausage
6 - 8 Italian Sausage mild or hot
1/4 cup of olive oil
4 cloves of garlic sliced in half
1 35oz can of imported Italian tomatoes
3 basil leaves, washed, patted dry and chopped
1/2 teaspoon of oregano
salt & pepper to taste
Sauce
Place garlic and olive oil in large sauce pan. Turn heat to medium and cook until garlic is soft and lightly browned. Crush the tomatoes and add with their juices. Fill empty tomato can 1/4 of the way with water and pour in with tomatoes. Add basil, oregano, salt and pepper. Bring to a boil, then lower heat to a simmer and cook until thickened approximately 20 to 30 minutes.
While sauce is simmering, saute sausage over medium heat in a heavy saute pan with 1/4-inch of water. Bring water to boil, put on lid and cook for 10 minutes. Remove lid and continue cooking over medium heat, turning every 2 to 3 minutes until golden brown. Sausage should reach an internal temperature of 150 to 156 degrees F. Remove from pan and slice into desired size pieces Add to sauce and let simmer on very low heat together for about 1/2 hour
serve over linguini and garnish with parmesan cheese and parsley or basil leaves
serves 6-8

Chicken breast wrapped in bacon and baked, potato sliced and baked in a cheese sauce, some green vegetables and corn on the cob.
Dessert will be meringue with cream and raspberry sauce.
Finished with a pot of coffee.

soup-fresh tortellini ,chicken broth,garlic sliced,simmer the tortellini,in the chicken broth with the garlic slices till done read the package for instructions,when finished add 1 tsp fresh pesto all can be bought fresh except the broth or make your own..meat- in an iron skillet heated till its screaming hot sear thin sliced steak till desired donness,eat this with salsa home made,dessert is chocolate pudding with whip cream yummmmm oh its home made as well !!:)

If I have the energy after work, I'm going to make spaghetti sauce, then put it over pasta. If energy is low and time is flying, it's tuna salad.

toasted pita pockets cut in half
add your fav. veggies
grilled chicken or beef or fish
your fav cheese
terriyaki sauce or fav sauce
1. steam veggies
2. cook meat how you like it
3. combine meat and veggies w/ terriyaki sauce
4. let simmer and cook together
5. toast pita and fill with veggies and meat
6 sprinkle cheese and enjoy!!
this is something just fun to make and quick to eat. you can do this with whatever you have in your fridge or cabinet. have fun and enjoy.

tonight i made meatballs in a spicy sauce with rice and salad. it was pretty amazing. plus leftovers can easily be turned into meatball subs tomorrow for work.
