Make some "Hobo Joes". Take a couple of pieces of foil and place on baking sheet. Mix a pkg of Lipton onion soup mix, a splash of worchester sauce & a little garlic powder into meat. Shape into patties & place in center of foil. Layer your favorite veggies such as potato slices, chopped onion, baby carrots, mushrooms, etc....Place a good size pat of butter in center & sprinkle w/ salt & pepper. Fold over into pouches & bake @ 350 - 375 for about 30 - 40 minutes.....Quick & Yummy!!

Yeah, I was going to say meatloaf, but that looks covered. You could also do a shepards pie with either a bisquit or mashed potato topper (bake the potatoes, rather than boil).

Try these recipes:
Beef Bake Recipe
Makes: 4 servings
Ingredients:
2 tablespoons vegetable oil
1 medium cooking onion chopped
1 clove garlic minced
1 pound lean ground beef
1/2 teaspoon ground coriander
1/4 teaspoon ground ginger
2 medium sized tomatoes chopped
1 teaspoon light brown sugar
2 tablespoons minced fresh parsley
or
1 tablespoon dried parsley
1/2 teaspoon salt
1/8 teaspoon pepper
1 green or red pepper
Directions:
This recipe is one of my favourites. It is also wonderful made with ground turkey or chicken. It is also really good if you add some grated cheese to the top in the last 5 minutes of cooking. I don't remember where this recipe came from. I have had it for years in my recipe box. Hope you enjoy it.
Preheat oven to 375f, Heat oil in a skillet over moderate heat. Add onion and garlic. Cook uncovered 5 min. Push to one side and add beef. Stir occasionally until browned.
Mix coriander, ginger, tomatoes, brown sugar, parsley, salt, pepper, and peppers in a bowl. Add to beef. Mix well and transfer to ungreased 1 quart casserole dish. Bake uncovered 20 minutes.
Taco Bake Recipe
1 lb. ground beef
1 medium onion, chopped ( 1/2 cup)
1 envelope (1 1/4 ounces) taco seasoning mix
1 can (16 ounces) tomato sauce
1 can (16 ounces) whole kernel corn, drained
2 C. shredded cheddar or American cheese (8 ounces)
2 C. original Bisquick
1 C. milk
2 eggs
Shredded lettuce
Chopped tomato
Sour cream
Heat oven to 325° F. Grease rectangular pan, 13 x 9 x 2 inches.
Cook ground beef and onion in 10-inch skillet, stirring frequently, until beef is brown; drain.
Stir in dry seasoning mix, tomato sauce and corn. Spoon into pan; sprinkle with cheese. Mix Bisquick, milk and eggs until smooth. Pour over beef mixture.
Bake about 35 minutes or until knife inserted in center comes out clean.
Cool 10 minutes before cutting.
Top with shredded lettuce, chopped tomatoes and sour cream.
For additional flavor, add sliced ripe olives, guacamole and a spicy item such as chopped jalapeno chilies or crushed red pepper.
