I am with those who say red is best. A hint: If potatoes taste sweet, they have set too long at a too high temperature and the starches are turning to sugar. Some people like it that way, but I personally do not.

I allus thought a Maris Piper was a Scottish musician, an Arran Banner was a potato and a spud was the wee stone in the centre of a gateway to stop the gate. Asda potatoes are all crap. Use Kerrs Pinks.

Marris Piper without a doubt
cut em into chips
boil for 5 mins and let them stand in the hot water for 5 mins
fry at 150 centigrade for 12 mins, take them out
let them rest for 10 mins
then turn the heat up to 180-190 and cook until golden brown
doing it this way you can make the most crunchest chips that you can imagine
as well use a good sunflower oil and a good deep fryer

acutall i like using the simple bag potatos like Green Giant or what ever you buy in the bags.... you can also go to your local farmers market and buy the california baker. they are good too. you could even use Sweet Potatoes and sprinkle brwon sugar and cinnamon on them. Bakers are not as sweet as say idaho spuds or Marie's. I use regular ol potatoes in them 5lb bags from The grocery store.

Russets from Idaho are best for potato chips.

I saw the maris piper thing online, but I don't know what that is.
