I cooked it like the directions said and the popper came up, but it looks really pink in the middle.

Leg of lamb can be a little tricky. A friend of mine suggested that I set the over for 450 and let it cook for one half hour. Then turn the oven down to the desired temperature and cook as directed. It will not be pink in the middle or greasy. Enjoy with mint jelly, if desired. I prefer it plain or with brown gravy.

I don't eat lamb, but it sounds medium rare to me which is the preferred temperature by most.

Many people like it pink in the middle, and it's more likely to be moist. don't overcook lamb cuz it'll be dry.

no it is not, this can be a little dangerous, better to cook through where the juices are running clear
