Chicken Piccata

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

BBQ Tofu Sandwiches

1 [12 ounce] package extra firm tofu
3 Tablespoons vegetable oil
1 sweet onion, thinly sliced
1 1/2 cups barbecue sauce
6 hamburger buns

Drain the tofu between paper towels until most of the water has been squeezed out. Slice tofu into 1/4 inch thick slices. Heat vegetable oil in a large skillet, fry tofu strips until golden brown on both sides. Add onion and cook for a few minutes, until onion is at your desired consistency. Pour in barbecue sauce [use more or less, according to your taste]. Cook the mixture for ten minutes on low and serve on buns.

1. Cook up 2 chicken breasts and cut up (or use leftover chicken) and leave on a plate

2. In the same pan , melt about 1/2 a stick of butter. Add 1 can of cream of mushroom soup (or cream of chicken or probably celery), 1/2 to 1 cup of parmesean cheese and 1/2 to 1 cup of milk, depending on how thick you like your sauce.

3. when it is all warmed up, add chicken.

4. Cook egg noodles and add cut up broccoli (frozen works too) to the water when you have about 4-8 minutes left.

When the broccoli and noodles are cooked to taste, top it with the sauce.

Viola! Easy Fettucine Alfredo with Broccoli and Chicken. (sorta - tastes nearly as good and can adjust everything to taste and even diet.)

Noodles
Whatever else is laying around

-Cook/brown the sides of the chicken in the oil/butter.
-Turn heat lower, pour cream of something (mushroom, celery, whatever you got) over the chicken.
-Add any potatoes, carrots, onions, salt, pepper, seasoning, white wine, or even light beer, to your taste as you let simmer for 20-30 minutes.
-Pour sauce and chicken over noodles.

(It's easy, and you can impress someone enough with common things).

Anything quicker would be grilled cheese and tomoato soup.

15 Minute BBQ Beef and Rice Dinner

1 lb. ground beef
1/2 c. chopped onion
1 3/4 c. water
1 c. bbq sauce
2 cups instant rice, uncooked
1 c. shredded cheddar cheese

Brown meat and onion in a large skillet, drain. Add water and bbq
sauce to skillet. Bring to a boil. Stir in rice; cover. Cook on
low heat 5 minutes. Sprinkle with cheese.

1 Tbsp. oil
4 salmon fillets (about 4 oz. each)
1 cup milk
1/2 cup (1/2 of 8-oz. tub) Cream Cheese Spread
1/2 cup chopped cucumber
2 Tbsp. chopped fresh dill weed or 2 tsp. dried dill weed

Heat oil in large skillet on medium-high heat. Add salmon; cook 5 min. on each
side or until fish flakes easily with fork. Remove from skillet; cover with
foil. Mix milk and cream cheese spread in skillet until well blended. Stir in
cucumber and dill. Return salmon to skillet. Cook 2 min. or until heated
through.

1 package (32 ounces) frozen french fries
1/3 cup cayenne pepper sauce
1/3 cup blue cheese or ranch salad dressing
Vegetable oil for frying

In a large deep skillet, heat 2 inches of oil over high heat until hot but not smoking.

Place the french fries in the skillet in batches and fry for 5 to 6 minutes, or until golden and crisp.

Drain on a paper towel-lined tray, then place in a large bowl; add cayenne pepper sauce and toss to coat.

Transfer to a serving platter and drizzle with the blue cheese or ranch dressing before serving.

Place potatoes and onions on an 18-inch square of heavy foil. Top

3 tablespoons butter
2 cups thin sliced onion rings; cut in half, separated
1 1/2 cups red pepper strips; 2"x1/4"

2 cups American cheese; 1/2" cubes
6 ounces deli roast beef, sliced thin; cut into 2"x1/2" strips
6 flour tortillas (10 inch); warmed

In 10 inch skillet, melt butter until sizzling; add onions and
peppers. Cook over medium-high heat, stirring occasionally,
until onions are golden (6 to 8 minutes). Remove from heat.
Stir in garlic salt, cheese and beef strips.

Place about 1 cup filling in center of each warm tortilla.
Fold two opposite edges of tortilla toward center over
filling. Roll up open end of tortilla toward opposite edge.
Place, seam-side down, on microwave-safe plate.

Microwave two sandwiches on high, turning or rearranging after
half the time, until heated through (1 to 2 minutes). Repeat
with remaining sandwiches. Makes 6 sandwiches.
