They are frozen store bought. I would like to bake or grill.

You can bake them in aluminum foil packets in your oven or grill them in the packets. I use butter or olive oil, lemon juice, garlic salt, lemon pepper and a little bit of dill weed. In the oven, I bake them at 400 degrees, checking after the first 15 minutes. The fish is cooked when it flakes easily with a fork.

You will need:

leeks
zucchini
summer squash
lemon
shallots
fresh thyme
butter
dried herbs of your choice (Italian blend or other mixture not excluding a blend of your own)
salt and pepper to taste
aluminum foil or parchment paper

Clean and slice leeks using only the white portion
Cube zucchini and summer squash
slice shallot in thin slices
slice lemon
mix softened butter with salt, pepper and dried herbs

On a piece of foil or parchment large enough to hold one fillet of fish and a portion of the accompanying vegetables layer in this order:

bed of leeks
fish
dot with seasoned butter
zucchini and squash
shallot
lemon
dot with more butter
top with fresh thyme sprig

Continue making packets for each fillet of fish.

Seal packet tightly and bake on cookie sheet in preheated 400F oven for about 15 - 20 minutes.

Delicious served with steamed rice or orzo cooked in chicken broth and seasoned with parsley.

Another option:
Mediterranean Style
amounts are to taste:
artichoke hearts
plum tomatoes
kalamata olives
lemon
feta cheese
garlic
olive oil
oregano
salt and pepper to taste

Mince garlic and combine with about 3-4 tablespoons olive oil. Allow to sit while preparing other ingredients to infuse oil with garlic flavor.

Quarter artichoke hearts, dice tomato, slice olives and crumble feta. Mix together.

Coat bottom of baking dish with about half the garlic oil mixture.

Place fish fillets on top in a single layer. Season with salt and pepper.

Top with artichoke/cheese mixture. Squeeze on fresh lemon juice and drizzle with remaining garlic and oil mixture.

Sprinkle with oregano.

Cover with foil and bake in 400F oven for about 30 minutes or until fish flakes with a fork. Serve with crusty bread.

Sometimes I like to add asparagus to the artichoke mixture too for some extra veggies.

Goes well with a salad and other Mediterranean goodies like grape leaves and hummus.

Just season the fish with an herbal sea salt and serve with mango chutney...yummmm

marinate them in lemon juice and sprinkle some lemon pepper over it. Grill and then serve them w/ tortillas, guacamole, salsa etc. you can also make them into fish tacos. mmm. =]
