Pan Seared Tuna
Ingredients:
2 lbs. Tuna Steaks
2 tbs. Olive Oil
juice from 1 Lemon
Black Pepper to taste
1/2 tsp. fresh chopped Parsley
Rinse Tuna under cold water and let drain.
Preheat skillet. Baste Tuna with Olive Oil and Lemon juice.
Sprinkle lightly with Black Pepper. Place Steaks in hot skillet.
Cook 3-4 minutes on each side or until fish flakes easily with fork.
Garnish with Parsley.
Baked Yellowfin Tuna Chops Recipe
Ingredients
8 (1/2-inch thick) yellowfin tuna steaks
6 to 8 potatoes, quartered
3 medium onions, sliced
2 cups pea pods, julienned
1 shot sherry
Olive oil
Salt
Pepper
2 Tbsp garlic, crushed
1 can pineapple, crushed
Instructions
Prepare marinade by mixing pineapple, olive oil, salt, pepper, and garlic. Marinate tuna steaks for at least one hour.
Place potatoes and onions in a baking pan. Sprinkle with olive oil, salt, and pepper, and bake at 375 degrees F until the potatoes are slightly underdone (a fork should go in easily almost to the center, but not completely).
Remove excess marinade from tuna steaks. Sear for one (1) minute each side over high heat.
Place seared tuna steaks over potatoes and onions, and sprinkle pea pods over all. Bake for 10 minutes at 400 degrees F.

GRILLED YELLOWFIN TUNA
Yield: 6 servings
2 pounds Florida yellowfin tuna steaks
1/4 cup Florida orange juice
1/4 cup soy sauce
2 tablespoons catsup
2 tablespoons vegetable oil
2 tablespoons chopped fresh Florida parsley
1 tablespoon Florida lime juice
1 clove Florida garlic, finely, chopped
1/2 teaspoon oregano
1/2 teaspoon pepper
Cut tuna into serving-size pieces. Place in a shallow baking dish in a single layer.
Combine remaining ingredients and pour over steaks; refrigerate steaks for 30 minutes, turning once.
Remove fish from marinade and place on a lightly-oiled grill.
Cook fish 4 inches from moderately hot coals for 5-6 minutes.
Heat marinade to a boil and remove from heat.
Turn fish over and baste with marinade.
Cook 4-5 minutes longer or until steak flakes easily with a fork.
Discard marinade. Tuna should have a pink center.

Davey's Broiled Yellow Fin Tuna and Relish:
40 min 30 min prep
2 servings
2 (6 ounce) fresh yellowfin tuna steaks
1 tablespoon cracked black pepper
3 ounces toasted sesame seeds (more if you prefer)
MARINADE
3/4 cup peanut oil
1 ounce sesame oil
2 tablespoons low sodium soy sauce
1 teaspoon minced garlic
2 tablespoons rice wine
1 teaspoon sugar
1 teaspoon Chinese five spice powder
1 ounce freshly grated gingerroot
RELISH
1 cup diced roma tomatoes
1/2 cup diced celery
1/2 cup diced red peppers
1/2 cup diced red onions
1 teaspoon salt (to taste)
1 teaspoon pepper (to taste)
2 tablespoons chopped parsley
1 tablespoon chopped cilantro
1 teaspoon celery seeds
1 pinch cinnamon
1 pinch nutmeg
1 teaspoon sugar
1 tablespoon mild cider vinegar (or to taste)
2 large limes, juice of
1. Mix all the ingredients for the marinade in a plastic bag.
2. Marinate tuna steaks for at least 4 hours in the fridge.
3. While tuna is marinating, mix all ingredients up for the relish and refrigerate for at least 2 hours. Toss again before serving.
4. Generously pepper both sides of tuna steaks.
5. Pre-heat broiler and broil steaks for 5-6 minutes per side, use your judgment, you do not want to overcook - broilers vary!
6. Dredge cooked steaks in toasted sesame seeds and top with relish.
7. Enjoy.

Ingredients
Cilantro-Lime Salsa
2 medium tomatoes, diced
1 green pepper, diced
1/2 red onion, diced
1/2 bunch cilantro, finely minced
Juice of 1 fresh lime
1/8 cup sugar
Black Beans
2 (15 oz.) cans black beans
2 Tbsp. jalapeno, diced
1 Tbsp. ground cumin
Tuna Steaks
2 yellowfin tuna steaks
1/2 cup blackened seasoning
Directions
Cilantro-Lime Salsa
1. Mix thoroughly and refrigerate.
Black Beans
1. Mix thoroughly and simmer.
Tuna Steaks
1. Dredge steaks liberally with blackening.
2. Cook in hot skillet 3-4 minutes per side.
3. Serve tuna on bed of hot black beans.
4. Serve with cilantro-line salsa over top.
5. Garnish with tomato-basil tortilla chips and remaining cilantro.

FRIED YELLOWFIN TUNA BUTTERMILK BITES
Makes: 6 servings
2 pounds Florida yellowfin tuna steaks
1 cup Florida buttermilk
1 cup biscuit mix
1 teaspoon salt
vegetable oil for deep-frying
Cut tuna into chunks and place in a shallow dish in a single layer.
Pour buttermilk over tuna and let marinate for 30 minutes in the refrigerator, turning once.
Combine biscuit mix and salt.
Remove tuna from buttermilk and roll in biscuit mix.
Fry in oil at 350 degrees F for 3-5 minutes or until brown and fish flakes easily with a fork.
Drain on paper towel.
Place toothpicks in tuna bites and serve with your favorite seafood sauce.

very simple just sear it lightly on bothsides until cooked to medium rare (do not overcook)
it has great flavour alone but you can add a little sauce if you wish light sweet soy sauce or a citrus sauce of some kind
another option is to marinate it asian style with mirin soy sesame and a little wasabi paste overnight then cook the same
serve over a arugula and white bean salad.
