I know 2 8ohm subs in parallel will produce a 4 ohm load, but i was told the amp will see half of your speaker load. So, would the amp be operating at a 2 ohm load?

The amp would be operating at a 4 ohm load. The impedance is determined completely by the speakers, not the amp's wiring configuration. It used to be common to say that a bridged amp "sees" half the impedance, because a 2-channel amp that's stable for 2 ohms in stereo is usually only stable for 4 ohms bridged. But in fact the amp "sees" exactly the load that it's connected to, which would be 4 ohms in your case.

Just remember that a 2-ohm stable 2-channel amp is generally only 4-ohm stable in bridged mode.
