In a dry (no oil) frying pan. Put the tortilla in, put your filling on it, put the other tortilla on top. Let the tortilla brown a little and the cheese melt then flip it and brown the other side.

Instructions
STEP 1: Heat a skillet to medium high heat. Spray the bottom of the pan w/ an olive oil spray (a healthier alternative to a heavy oil coating the pan) STEP 2: Add tortilla to pan, sprinkle with the cheddar and Monterey Jack cheese, add chopped onion, cilantro, sour cream, and black beans. STEP 3: Put a second tortilla on top of the cheese, onion, black beans. Grill until the tortilla is golden brown, then flip the tortilla over and cook the other side (be sure to spray w/ the olive oil spray again). STEP 4: Remove quesadilla from pan, sprinkle with garlic salt, chili powder or cayenne pepper for taste. Serve with a side of salsa and/or sour cream. Overall Tips & Warnings
If you like meat- feel free to add chicken or swine. You can also add more vegetables if you'd like. If you are trying to gain weight, add guacamole, extra cheese and sour cream.
Use caution when flipping the tortilla - contents may shift during the flipping.

Bacon & Caramelized Onion Quesadilla
One of the best quesadilla's I've ever made was pretty easy to do.
1/2 pound thick cut bacon/diced
1 tsp butter
3 onions thinly sliced
1 TBL worchestershire sauce
1 TBL soy sauce or balsamic vinegar
1 tsp sugar
(the above makes about 1 1/2- 2 cups filling. you can make more or less depending on your needs. You'll want about 1/4 to 1/3 cup per quesadilla. (once filling done, you can freeze it)
Monterey Jack or Cheddar cheese shredded
Flour Tortillas
Non stick spray and/or Butter
Saute the bacon and onions together over med-low heat until starts to get brown and softened...don't burn
Add in the worchester, soy/vinegar and the sugar and continue to simmer until liquid is gone..you can add a bit of water to help it steam a bit, i usually add up to 1/4 cup of water....(you can drain any extra fat..I've also put on a paper towel and cooled a bit. The butter gives a nice flavor and color.)
When done..it's like making a grilled cheese sandwich. My preferred method is to brush half the tortilla with a bit of melted butter..put in pan...on half of the tortilla, top with the onion mixture and sprinkle with cheese, then fold over the other half. 2 at a time can fit in a standard round pan. brush the bare side with the butter. Cook at medium low heat until browning...once that happens, it's easier to flip..like a pancake to do the other side...they can burn easily..so watch carefully...it only takes a minute or so. When both sides are done...I slide onto a cutting board and cut with a pizza cutter. Serve hot with sour cream. Kids love them...but remember..they aren't exactly the healthiest version...so if you're watching your calories...you can skip the bacon and use cooking spray instead of butter..then fat free sour cream. Yum!

All you need is fresh tortillas, a hot skillet and cheese... make sure your skillet is pretty darn hot, but not BURNING hot, and add a tortilla.... flip it so it gets lightly brown on both sides, take it out and do the same thing with another one. Add your preferred cheese to the tortilla in the pan, and whatever other ingredients desired (cooked chicken or steak, and a good mexican cheese make AWESOME quesadillas, but you can pretty much put whatever you want in them) then top with the other, already lightly browned tortilla. Let cook for a minute on one side, then flip to the other side, continue to do so until cheese is melted, and to avoid burning the tortillas. You want them crisp and brown, but not burnt. Dip them into guacamole, sour cream, and salsa, and eat 'em up!

I've done them a few different ways, but generally on VERY low heat in a skilled I put down a tortilla and sprinkle with cheese. I cover the pan for a bit and then put the 2nd tortilla on top and flip the thing over and cook for a couple of minutes.

Speedy Salsa-Chicken Quesadillas
1/2 TACO BELL HOME ORIGINALS Salsa
2 Tbsp. MIRACLE WHIP Dressing
1/2 tsp. chili powder
8 flour tortillas (6 inch)
3 cooked boneless skinless chicken breast halves (3/4 lb.), sliced
1 cup KRAFT Mexican Style Shredded Four Cheese
COMBINE salsa, dressing and chili powder; spread evenly onto bottom halves of tortillas. Top with chicken and cheese.
FOLD tortillas in half to enclose filling.
COOK in skillet sprayed with cooking spray on medium heat 4 to 5 min. on each side or until both sides are golden brown and cheese is melted. Cut each quesadilla into three wedges to serve.

Put your ingredients all over the tortilla and cover it with another one. You can then, pan fry it or put it into the oven until the cheese melts and it all gets crusty. (Brush the top tortilla with a little olive oil or melted butter, before baking.oh and by the way, you will have sprayed the pan with butter, oil or cooking spray to get the bottom done)
When you are done, cut into wedges top with sour cream and tomatoes and eat! I personally, use the oven method. Flipping is difficult especially if you have more than say just chicken, beans and cheese.

You just take the tortilla and put in a pan to warm until it is soft. (so the tortilla doesn't split when you go to fold it) Then you put the cheese and other ingredients you have on half of the tortilla. Fold in half inside the pan. Then heat in pan until all cheese is melted. Flip on both sides until your quesadilla is golden brown.

Heat a big non-stick skillet on medium heat. Take a big tortilla , brush lightly with olive oil. Put tortilla in the hot skillet. Add cheese and what ever else you want in it. Fold over. After one side is lightly browned, flip over to brown other side.

I don't know either but when I want to know what is good out there to cook I always go to the website www.allrecipes.com and pick out the recipes with the 5 stars rating from at least more than 20 people. The more high ratings the better.
