okay so everything thinks brocoli and cheese will make a heavy side item with pork chops and scalloped potatoes
what about pilaff rice with portabells in the mix, my boy friend is making the scalloped potatoes and pork chops, but it won't be enough does pilaff sound like a light thing to add, and i don't ahve time for a salad i why i mention this, salad sounds great, but i can't go to the store after work.

a nice pilaff sounds good. Or if the peeps think brocoli and cheese too heavy, maybe a light brocoli salad? Just take the fresh brocoli and add some bacon bits, a bit of italian dressing, some onion and garlic and a bit of miracle whip. Toss with whatever other spices you might like and serve chilled

I don't imagine that you are thinking a thick," cover everything in sight " cheese sauce for the broccoli? With just a light sprinkling of cheese on the broccoli, scalloped potatoes and pork chops, sounds just wonderful. Just don't stress any more over this. Enjoy the event and do it. You are making this too hard!

Pilaf is nice and light but do you really want both rice and potatos? That's a whole lotta carbs ans starches...too filling. I'm not trying to be a pain just answering your Q honestly. I would say have some canned veggie you have in stock. Or the potatoes should enough.

How about green beans with bacon and onions? Cook two or three slices of bacon, chop about 1/4 of an onion, crumble bacon and add both to green beans, canned or fresh. If you don't have any onion, it's good with just bacon.

Mushroom Rice Pilaf
Ingredients
4 tablespoons butter, divided
1 cup sliced mushrooms
1/2 medium onion, chopped
2 cloves garlic, minced
salt and pepper, to taste
2 cups long-grain rice
3 cups beef stock
1 teaspoon chili powder
1 whole bay leaf
Directions
Preheat oven to 350 degrees. In a large saute pan over medium heat melt 1 tablespoon of the butter and saute mushrooms until liquid clarifies, about 10 minutes. Remove mushrooms and set aside. In same pan melt remaining 3 tablespoons of butter and add onion, garlic, salt and pepper and sweat until aromatic, stirring often. Add rice and stir to coat. Continue stirring until rice begins to smell slightly nutty.
Add beef stock, chili powder and bay leaf; raise heat to high and bring to a boil, stirring occasionally. Return mushrooms to pan, cover and place pan in oven to cook for 20 minutes.
Allow to rest at room temperature, covered, for 15 minutes before turning out into a large bowl to serve.
