I am planning a dessert party and want to pair some coffees and teas to the desserts. I know I want to have something chocolate with a black tea of some kind, or dark roast coffee, and a lighter dessert with say, a white tea. As you can sea I have no idea what to do. I was wondering--does anyone have any suggestions about which teas/coffees I should use and what kind of recipes to work with?? thanks.

Maybe with tiramasu just have regular coffee with sugar and cream and all that. It matches the colors alittle. And you can match a white colored tea with white chocolate.
