The Ultimate Salmon Fillets:

30 min 10 min prep
3-4 servings

1 lb salmon fillets, fresh or frozen
1/3 cup sour cream or yogurt
2 teaspoons prepared mustard
2 teaspoons finely minced onions
2 teaspoons dried dill weed
3 tablespoons mayonnaise
2 tablespoons grated parmesan cheese
1/2 cup grated cheddar cheese
paprika

1. Preheat oven to 450 degrees.
2. If frozen, partially thaw fillets and cut into serving size pieces.
3. Place in a greased baking dish.
4. Combine sour cream or yogurt, mustard, onion, dill, and mayonnaise.
5. Season with salt and pepper.
6. Spread mixture over fish.
7. Bake 20 minutes per inch of thickness of fish if frozen or 10-12 minutes if thawed.
8. When just done, sprinkle with the cheeses and a dash of paprika.
9. Broil 1 minute or until the cheese is bubbly and flecked with brown.
10. Serve with lemon wedges.

here's a recipe my family loves..

salmon fillets with honey mustard
1 tablespoon butter, melted
2 tablespoons orange juice
1 tablespoons honey
1 teaspoon Dijon mustard
1 teaspoon dried tarragon
Salt and pepper to taste
2 tablespoons olive oil
4 salmon fillets,
Preheat oven to 450. Mix the first 6 ingredients together in a small bowl, Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin side down. Sear for about 4 minutes. Brush the top of the fillets with the glaze. Place in the oven and bake until done, about 5 minutes. place under the broiler to lightly brown. Serve immediately, spooning extra heated glaze over top .

Roasted Salmon Fillet - Preheat your oven to 400 degrees. Drizzle olive oil over one side of salmon fillet just to coat, sprinkle with kosher salt, fresh black pepper and a sprinkle of dried dill. Turn fillet over and repeat. Take thin slices of lemon and place one over each fillet. Place fillets in roasting pan, roast in over for 15-25 minutes, depending on thickness.

nice sliced pieces then use lemon on all add a herb crust of pepper garlic parsley and lightly put it on then grill the filllets and put on top of rice or stir fry broccoli and red peppers and carrots
