You won't find tradtional food coloring in pink, but if you go to a big craft store (Hobby Lobby, Michael's, JoAnn Fabrics, etc.) you will find cake decorating icing colors in just about any shade you can imagine. These are very concentrated gel colors; a little goes a long way. If you use these, test a small amount of coconut first to see how it turns out. If you want a very pale pink, you'll probably have to dilute the icing color in water, or clear vanilla extract (also a cake decorating item.)
If you have time to find them, they are worth the effort, and the small jars (1 oz.) don't cost a lot. (I generally find them priced at about $1.50 each.) Wilton icing colors are sold in the craft store chains (even Super Walmart stores have them in the craft section near silk flowers, fabrics, etc.), and in smaller stores that sell cake decorating supplies, you may find similar products from other manufacturers. Wilton makes a few different shades of pink. (There is a link in Sources to the Wilton online store's page on icing colors.)
The only other idea I had was if you use a very small amount of red, diluted in water to tint the coconut, then rinse off the tinted coconut as needed to wash off the color if it comes out too dark. Then press out the excess water and let the coconut air dry, or dry out in a warm oven.

you could try to dilute the RED. Do like 1 drop of red to a glass of water maybe? if you only use a little, the coconut should be pink since coconut is white....
They make PINK food coloring. It comes in a set of 4 NEON colors...they look really cool.

I did this last year making an Easter cake and my best advice would be to add just a tiny tiny drop of red food coloring to the coconut, mix it all together and then add more red coloring if you feel you need it. I would not dilute the food coloring with water, this will make the coconut extremely sticky and hard to work with.

Hmmmm - traditionally pink is red and white - maybe you could get close with red and just a touch of yellow?
Or since the coconut is already white maybe a very light touch of the red?
