When you say griddle I am assuming you are meaning a flat top grill....
A griddle should be cleaned with a wet rag and re-oiled about 2-3 times a shift (about every 2 or 3 hours). It doesn't have to be an intensive cleaning during the shift (hopefully you are slammed with business making money and don't have time for an intense cleaning), just a good wipe down to pick up any food that got left behind from the last order.
If you don't do this, these little bits will become rather charred and can alter the flavor of the other things you are cooking. And of course if you never do this it can pose a fire hazard b/c of the grease build up on the edges and in the drip catch in the front (or back or wherever it is on your griddle)
At the end of the day the griddle should be scrubbed with a metal pot scrubber or grill brush if you want to splurge. :o)

Health and hygiene states that a griddle should be clean every day as you are serving the public,you are liable to give someone food poisoning if not.

It need scraping several times a day and cleaned real good daily if it's not clean you could get food poisoning and bugs and rats would move into the cafe

You get food build up (gross), and the quality of the food is terrible. A grill should be cleaned off(with a grill brick) 2 times a day or, every shift.

Well, if you don't happen to work there, I would say never.....
however if you do, I would say at least daily. Nothing happens if you dont because one assumes heat is used to cook griddle food and the head kills the germs, however it also leaves residue that prevents good heat transfer, burns, and kinda looks bad. black coated omelets are ditzy....

*tut tut* dear Lord, and we trust these cafes, and pay them big money in london, and they dont even clean the griddles??!
no wonder most of our diets are considered carcinogenic- with all that carbonated food left over, and hydrogenated fats!!

You scrape it throughout the day the get rid of food particles. You need to wash it down daily, hopefully a few times a day. Otherwise, yuck!
